Hi Boo - sounds like this week is going well apart from you being poorly :( I hope you are feeling better once off the meds - I hate antibiotics they make me feel rubbish too. The lemon and chili chicken sounds gorgeous! would love the recipe if you don't mind?

Here's the lemon, chilli chicken, it was bloomin lovely last night! :D:D

Lemon Chilli Chicken
Serves 4
Extra Easy – syn free per serving
Original – syn free per serving
Ingredients
8 Chicken Thighs – boneless and skinless
2 teaspoons of garlic powder
1 teaspoon of freshly grated ginger
1 medium onion, finely chopped
3 cloves of garlic, crushed and chopped
220 ml of chicken stock
1 teaspoon of ground coriander
1 teaspoon of cumin
1 teaspoon of chilli powder
1/2 teaspoon of turmeric
the juice of half a lemon
2 tablespoons of white wine vinegar
Frylight or Pam spray
Some fresh coriander or cilantro leaves (or dried if you havent got fresh)
few slices of fresh lemon to garnish

Method
Spray a frying pan with Frylight or Pam spray
Brown the chicken, and set aside
Add the onions and fresh garlic and ginger and cook for approx 2 mins, add some more Frylight or Pam spray if needed.
Add the spices and stir fry for a further 1 minute.
Stir in the lemon juice, stock and vinegar.
Add back the chicken pieces, bring to the boil, reduce the heat and cook for approx 20mins until the chicken is tender.
If the sauce dries out too quickly add a little more water.
Top with some coriander and fresh lemon slices
Serve with your choice of side and vegetables

Day 89 - Sunday 14 August 2011

I woke up really early this morning for no particular reason other than just habit I guess and decided that instead of waiting till after lunch to visit Mr Boo's parents we would go early so we had some day left to spend at home together.

The roads where actually quite quiet today and no traffic jams which is virtually unheard of in North London. We took Thomas with us as he's going back home on Tuesday it was a nice relaxing morning chating over a cup of tea and finding out whats been happening with them, only wish we lived a bit closer as they are getting older and both have health issues.

On the way home we stopped off at Asdas and got some more fruit, again!!! I'm spending a small fortune on fruit and swear that I'm keeping Asda's fruit section in profit!

My step dad came round today for a chat and to drop off a tent he had bought for my son for his camping, he upset me a little bit with his talk of holidays and hotels they are going to when he knows that we are strapped financial wise - dont' get me wrong I don't begrudge them having holidays, I just don't need it rammed down my throat especially when in the next breath mum is pleading poverty when I have even said anything about the debt we are in. Anyhoooo, enough of that I think my hormones are playing up today - I might not be rich in money, but I am rich in the love of my family - I know that sounds corny but its true. Money can't buy that :)

Anyhoo enough of feeling down, I'm not going to let things beat me, here's what I've had to eat today so far;-

Breakfast - 2 wheatabix with semi skimmed milk

Snack - 2 doughnut peaches

Lunch - Tilda's lime and corriander rice (2 syns)

Dinner - is going to be gammon with mixed veg and potatoes

Money can't buy health and happiness :D

But it must help cos if you were ill you wouldn't have to worry about bills and if you were sad you could buy yourself something to cheer you up.

I've copied that recipe and will add it to my very long list of recipes to try :)
 
Lol Tilly your post did make me chuckle :D its very true lol.

Please do try the recipe it really is yummy, I'm not a great fan of chicken thighs, but the skinned and boneless ones are ok :)

Right I've had my dinner which was yum and my treats so, so I'm going to have a nice cup of coffee, take a nice relaxing long bath then get my things ready for work tomorrow.

Not looking forward to it to be honest, hopefully weather permitting I will walk to work again, I really need to get some sort of rain mac or something so if it does start to rain I'll have some protection, its terrible how you come to rely on the car so much :eek:

Weigh in on Tuesday I'm sooo hoping I've managed to get some of that gain off, I will be devastated if I haven't :eek:

Our evenings sound very similar hun, I'm planning to be in bed by 8pm, watch don't tell the bride and then asleep by 9pm, sleep tight lovely x

Recipe sounds lush, I will try it when feeling adventurous as so many ingredients :D

Money won't make them happy sweetie and you have a lovely family :) I just keep telling myself it will get easier one day or we'll move somewhere nice. Living in cuckoo land maybe but its nice to dream :D xxxxx

I know what you mean about other people pleading poverty and then swanning off on holiday - I have a friend who's terrible for it, she still lives at home and her parents pay for everything for her and I'm trying to find money for the council tax bill lol. Just smile and nod I find that's the best thing to do!

Hope work goes quick for you today, and I'm positive you will see the back of some (if not all) of that gain on Tuesday :)

Day 90 - Monday 15 August 2011

Hiya girlies, I've got a stinking headache so its going to be a quick posting tonight them I'm off to bed.

Woke up really early this morning, had a lovely shower and got ready for work, as it was a nice sunny morning I decided to walk, breakfast was 2 wheatabix, yum!

Mr Boo made some syn free coleslaw yesterday so decided to have this with some ham in a salad, it was lovely :D

Tonights dinner was meatballs with pasta, yum!

Late this afternoon I started to get a sinus headache and its developed into a full blow migrane, so I'm off to bed. Hope everyone is having a good evening Boo xxxx sorry not much company tonight :(

I hope you're feeling better this morning lovely and that the date for your op comes very quickly!

Thank you for typing out that lovely sounding recipe, I have a bag of chicken thighs in the freezer so might plan that one for the weekend - providing mr Pie hasn't curried them by then as he is apt to do! We both love spicy food and most things left lingering for too long end up in a curry or a chilli!!

I'm sure we must have the same mum and dad you know - mine are off in a few weeks for their third or fourth trip this year and they're already talking about a trying to fit in another one before Christmas!! However, at least they don't have the cheek to plead poverty in the same conversation ! I just keep thinking that now in my thirties is when life is meant to be tough and that when I reach their age it should be easier - just not sure I have the right plan in place to get me from here to there yet!! Meanwhile, we have our lovely families and our virtual minimims families to keep us sane - or at least in some semblance of sanity!!

Day 91 - Tuesday 16 August 2011

Hiya girlies thanks for the lovely get well messages, head is still not right so I'm leaving my contact lenses out this morning and wearing my glasses (which is something I never do!) feels very strange but I'll see how it goes lol

Cherry, I agree with your post whole heartedly, I'm in my forties and still struggling! Well at least its same ol, same ol lol, never mind as you said we have our families and our minimins family which really helps :D

Right back to today, I had a ham omlette this morning, but I think I've just gone off them! :rolleyes: Strange how something tastes lovely one day and next its not so, never mind I'll have to think of something else to have for breakfast during the week which does not use any of my healthy extras up, any ideas anyone?

Lunch today is 3 riveta with low low spread and some pickle (got to find out the syns) with some fruit, not sure about dinner tonight but I think its chicken!

Weigh in tonight and if I have lost any of that 4 lb I put on last week I'll be really upset - watch this space.

Thomas is going home today so Mr Boo will be feeling down when I get home, I'll have to give him a big cuddle and remind him he'll see him again soon.

My daughter Cass is due down in a couple of weeks, I'm sooo looking forward to spending some time with her, I can't wait :D

Right I'm off to read some diaries, I'm being naughty as I'm at work lol Boo xxx

My favourite omelette is mushroom, or peppers and onion :), and of course, both even better with cheese added ;)
