katie, im a total hypocrite. I weighed in yesterday (proper WI today) and had lost 3lbs.. ive just been to class and somehow gained 1lb.

my new resolution - no more scale hopping! :p x

...especially as i always advise people as to how bad it is!!!
 
Breakfast - hi fi bar (1/2 HEXB)

Lunch - Alpen light bar (1/2 HEXB) + satsuma

Dinner - Monster salad (Lettuce, cucumber, tomatoes, mushrooms, carrot, sweetcorn, gherkins and cottage cheese, HEXA of cheese, coronation chicken salad (1 syn) and potato and bacon rosti's

This was so delicious, the plate was so full but only 1 syn for the whole thing. EDIT ... just had a look at the picture. Its unbelievably blurry. Thats what letting others take your photos does for you! If anyone wants the recipes for the individual aspects of it though let me know. They were all amazing!

Snacks - 2 cups of tea (milk = 1 syn)

Syns for the day - 2
1 x HEXA
1 x HEXB
 
i'll request the coronation chicken salad part please :D rostis look lovely as well but i know how to make them :) x
 
Rostis were super tasty i've never had one before but I really enjoyed them!

Coronation chicken was so easy.
1 tbsp extra light mayo (1 syn) (could be left out for syn free goodness but I like the creaminess!)
1/2 tsp mild curry powder(or to taste)
4 tbsp FF natural yoghurt.

Mix these three up into a dressing.

Take chopped cooked chicken, fresh diced mango, diced red pepper, diced spring onion ( i just used normal) diced cucumber and mix them all together in a separate tub. grate a good pinch of lime zest and a squeeze of juice over the top and mix all together, add the dressing and mix and chill in the fridge for as long as you like :)

so tasty and flavoursome!

Its a bit of a faff to chop everything up for it but for the syns it is SO worth it. Think i'mma make up a big batch for the fridge over the week to have on salad or jacket potatoes for easy lunches!

That sounds/looks delish! I made a similar version last weekend with chicken, red onions, red & yellow peppers, vanilla mullerlight and curry powder :drool: Will definitely be giving your version a try!

Hi guys,

Unfortunately i've not been at home today so food has been a little boring/ what I could grab!! :( Tomorrow though is either stuffed cabbage parcels or slimming world kfc depends what we are in the mood for tomorrow! :)

Food today has been

Breakfast - alpen bar (1/2 HEXB) and orange

Lunch - ainsley harriott tomato and garlic cous cous (not sure on syns think its 1?)

Dinner - sweet and sour rice with diced sausage and mangetout, green beans and spring greens - boring but still yummy :D

Snacks - bit of nutella (2 syns), walkers baked crisps (5 syns) slice of dry toast (1/2 HEX B) Milk for tea (HEXA) frozen toffee muller light!

Tomorrow will be more fun!!

I've been on SW just over 5 weeks. Probably wasn't the best idea starting before Christmas since I put on 7lbs over the festive period. Still, I managed to lose the exact same amount in the two weeks since. Handy! :D

Haha I put on 7lbs over christmas too :p Still got 2lbs to go to get back to pre christmas weight :( Ill get there though!!!

I will subscribe to your diary and have a nosey through it too :D

Smash is fab! Going to be attempting Smash and cottage cheese, cheese twists at some point in the next week or so. Sounds fab!
