not quite chicken stew, but I have a few chicken casserole recipes on my blog if you click on the link in my siggy.

Sweet potato or lentils are good for thickening stews/soups or casseroles.

Powdered mash does the trick if you're looking for something to thicken a stew.

There's a coriander chicken stew recipe. And mesquite barbecue chicken stew or sweet potato barbecue chicken stew.

I just cook it as normal and at the end mash a few of the potatoes to the side of the pot and mix, thickens it up nicely
