Ahhh, thanks, dirtydancing. I'm a Teaching Assistant in a primary school so am on Half-Term this week so have a bit more spare time to submit recipes. Back to it next week! :S

SLOW COOKER SPICY LENTIL SOUP - Serves 4

Syn Free

100g dried red lentils
1 litre chicken stock
400g can chopped tomatoes
2 dried bay leaves
3 cloves of garlic, crushed
Mild curry powder to taste
2 small carrots, peeled (if necessary) and chopped
1 stalk celery (if you like it), trimmed and thinly sliced
2 medium potatoes, peeled and diced

Rinse the lentils under cold water until the water runs clear.
Put the lentils, stock, tomatoes, bay leaves, garlic, curry powder, carrot, celery and potato in a 4.5 litre slow cooker. Cook on Low for 6 hours.
Season with salt and black pepper.

Could top with FF yoghurt and/or finely chopped coriander.
 
FIERY BURGERS - Serves 4

Syn Free

450g extra lean minced beef
1 small red onion, finely grated
1cm fresh root ginger, peeled and finely chopped (or use half a teaspoon of ground ginger)
1 or 2 red or green chillies, deseeded (if preferred) and finely chopped
1-2 tsp. Worcestershire Sauce

If preferred, you could replace the ginger with 1-2 tbsp. curry powder and the W. Sauce with mango chutney (Synned, of course!)

Place everything in a large bowl and mix together thoroughly. Season with salt.
With damp hands, shape the mixture into 4 evenly sized burgers. Cover and put in the fridge for, at least, 20 minutes.
Spray each burger with a little Frylight and cook under a pre-heated moderate grill for 6-8 minutes on each side or until the juices run clear.

Lovely topped with a HEX mature cheese and served on a HEX wholemeal bread bun with some salad leaves and a side of SW wedges.

AROMATIC LAMB (for the slow cooker) - Serves 6

Syn Free

675g lean leg of lamb, cut into 2.5cm/1 inch cubes - the butcher will gladly do this for you.
1 tsp. fennel seeds, crushed
1 tsp. cumin seeds, crushed or could use ground cumin
1 tsp. cardamom pods, bruised
2 tsp. curry powder to suit your taste
450ml hot lamb stock
400g can chopped tomatoes
100g dried red lentils, rinsed

Place the lamb in the slow cooker, season with salt and pepper and stir in the spices.
Add the remaining ingredients.
Cook for 4-6 hours on High or 8-10 hours on Low.

Lovely served with a HEX chunk of crusty bread or with potatoes and lots of veg.
 
LEMON CURD SOUFFLE OMELETTE - Serves 2 (This is one of Delia's.)

3.5 Syns per serving

Grated zest and juice of 1 large lemon
3 very large eggs
1 level tbsp. granulated sweetener
4 level tsp of lemon curd - 4 Syns
2 level tsp. of butter - 2 Syns (I thought of substituting with Frylight but thought it might affect the taste.
1 level tsp. icing sugar - 1 Syn

Delia suggests using a frying pan with a diameter of about 17cm.

Firstly, put the pan on to a low heat to warm through.
Next, whisk the egg whites until they stand up in soft peaks then, in a jug, add the lemon zest and juice to the egg yolks, together with the sweetener, and whisk until the mixture is creamy.
Now, add the butter to the pan and turn the heat up to high. Then, using a large metal kitchen spoon, lightly and quickly fold the whites into the yolks.
As soon as the butter is foaming, pour in half the mixture, then add four teaspoons of lemon curd, in little blobs, all over.
Spoon over the rest of the mixture and dust the surface with the icing sugar.
Quickly place the pan under the pre-heated grill until the surface is golden brown.
Serve immediately. Delia suggests serving with some pouring cream but it also goes nicely with FF crème fraiche. Maybe FF fromage frais would be OK too but haven't tried it.
 
COD WITH TOMATO AND PEPPER SAUCE - Serves 4 6.5 Syns for the whole recipe. 1 small onion, finely chopped 1 garlic clove, crushed 1 red pepper, deseeded and thinly sliced 400g can chopped tomatoes 100g diced chorizo - 6.5 Syns Tiny pinch of xhilli flakes 4 skinless cod fillets Soften the onion in the microwave, with a splash of water, for about 3 minutes. Cook the chorizo in a non-stick frying pan, until the oils run and it is crisping up. Add the onion and garlic, cooking over a medium heat for one minute, as the onion will already have softened. Add the pepper slices and cook for another minute, re-spraying, if necessary. Add the tomatoes and chilli flakes. Bring to a gentle simmer, reduce the heat and cook for 10 minutes. Meanwhile, lightly season the cod fillets with salt and a little black pepper. Add the fish to another pan, which has been sprayed with Frylight. Cook for about 6 minutes, turning once. The fish is cooked through when the flesh flakes easily when pulled with a fork. Place some of the tomato sauce onto warmed plates and place the fish on top. Serve immediately. This is lovely served with new potatoes and peas or mange tout.

I've Not had fish in years. Apart from chippy fish coz I didn't like it but the sauce was really nice. Definatley on the menu every week now .
 
HEARTY BEEF CASSEROLE - Serves 6

10.5 Syns for the whole recipe

1 kg top rump or topside of beef, cut into large chunks with all visible fat removed
3 tbsp. plain flour, seasoned with salt and pepper - 10.5 Syns
70g smoked bacon, chopped and all visible fat removed
18 whole shallots, peeled
500g small whole carrots (if poss.), scrubbed and trimmed
6 small turnips, scrubbed and quartered
2 cloves of garlic, finely chopped
400g can chopped tomatoes
500ml beef stock
Bouquet garni


Pre-heat the oven to 170C/Gas 3.
Toss the beef in the seasoned flour, spray a large frying pan well with Frylight and brown the beef on all sides. Remove beef to an oven-proof casserole dish.
Add the bacon to the pan and cook until crisp. Add to the casserole dish.
Re-spray the frying pan, if necessary, add the shallots and fry gently for 5-8 minutes, until starting to brown, then add the carrots and turnips and continue cooking for a further 10 minutes, browning gently.
Add the garlic and tomatoes and stir together for 2-3 minutes. Transfer it all to the casserole dish and stir in the stock. Add in the bouquet garni. Bring to the boil on the hob, then cook in the oven, covered, for about one and a half hours or until tender.
Remove the bouquet garni and season.
If the gravy needs thickening, rather than add cornflour, put the casserole dish back on the hob and boil rapidly until the desired consistency is reached.

Lovely served with mashed potatoes and a green veg.

REALLY EASY STEW - Serves 4

9 Syns for the whole recipe

500g diced lean stewing steak
2 carrots, chunkily chopped
2 parsnips, chunkily chopped
1 large onion, chopped
250ml red wine - 9 Syns
2 dried bay leaves
Beef stock cube

Pre-heat the oven to 170C/Gas 3.
Place all the above ingredients, plus seasoning, into a lidded casserole dish. Mix well and top up with cold water, just covering the meat.
Put in the oven and cook for 3 hours.
Halfway through the cooking time, remove the casserole dish from the oven and stir. Return to the oven.
If the stew needs thickening at the end of the cooking time, put the casserole dish on the hob, boil rapidly, stirring from time to time until the desired consistency is reached.

Good with mashed potato and green veggies.

CHILLI SAUSAGES - Serves 4

1 Syn per serving

8 BGTY sausages - 0.5 Syns each
1 onion, finely chopped
1-2 red chillies, deseeded and chopped
1 tsp. ground cumin
1 red pepper, deseeded and cut into chunks
1 orange pepper, deseeded and cut into chunks
400g can chopped tomatoes
400g can red kidney beans, drained and rinsed
125ml pasatta

Spray a large pan well with Frylight.
Brown the sausages lightly on all sides under the grill whilst adding the onion, chillies, cumin and seasoning to the sprayed pan and cooking for 5 minutes, adding a splash of water if it sticks.
Add the peppers to the pan and cook for 3 minutes before adding the can of tomatoes, kidney beans and passatta.
Add in the browned sausages and stir well.
Bring to the boil, turn down to simmer and cover with a lid.
Gently simmer for about 30 minutes.

Great with mash or jacket potatoes.
 
PORK LOIN STEAKS WITH MELTING MOZZARELLA AND SAGE - Serves 4

Syn Free, if using cheese as part of a HEX and bacon, instead of Parma ham.

4 lean pork loin steaks, all visible fat removed
50g light Mozzarella cheese (or similar), thickly sliced into 4
8 fresh sage leaves
4 slices of Parma ham (0.5 Syns per slice) or bacon, all visible fat removed


Pre-heat the oven to 180C/Gas 4. Place empty baking tray in to heat through.
Place the pork steaks on a chopping board and, with a sharp knife, carefully make a slit horizontally in one edge of the pork to make a pocket.
Take a slice of the cheese and two of the sage leaves and push it into each pocket.
Season with black pepper and maybe a little salt before wrapping each steak in a slice of Parma ham or bacon.
Spray a large frying pan with Frylight and seal the steaks on all sides.
Place on the hot baking tray and cook for about 15-20 minutes until browned and cooked through.

Lovely with some new potatoes, mushrooms and petit pois.
 
CHEESY CRUMB TOPPED MEATBALLS - Serves 4

4.5 Syns for the entire recipe, if using the cheese as part of a HEX.

1 red onion, finely chopped
2 cloves of garlic, crushed
450g extra lean minced pork
2 tbsp. fresh basil, chopped, plus 1 tbsp., roughly torn
400g can chopped tomatoes
2 tbsp. of tomato ketchup - 2 Syns
1 tbsp. flat leaf parsley, chopped
25g wholemeal breadcrumbs - 2.5 Syns
60g grated cheese

Pre-heat the oven to 190C/Gas 5.
Spray a large non-stick pan with Frylight and fry the onion and garlic until softened, adding a splash of water if it starts to stick. Allow to cool slightly.
Place the mince and chopped basil in a large bowl and add half the onion mixture. Mix together well and shape into about 15 balls.
Add the chopped tomatoes, ketchup, parsley, torn basil and some black pepper to the remaining onion mixture.
Pour this sauce into the bottom of a large gratin style dish. Carefully place the meatballs into the dish and spoon a little of the tomato sauce over the top.
Mix together the breadcrumbs and grated cheese. Top the meatballs with the breadcrumb mixture and bake for about 30 minutes until the topping is golden and the meatballs are thoroughly cooked through.

Lovely with a HEX chunk of crusty bread and a side salad.
 
CHICKEN AND CHORIZO RICE ONE-POT - Serves 4

5.5 Syns per serving

4 skinless pieces of chicken, breast or boneless thigh
1 large onion, chopped
1 red pepper, deseeded and chopped
3 cloves of garlic, crushed
200g diced chorizo - 13 Syns
1 tbsp. tomato puree
1 tbsp. thyme leaves, chopped
150ml dry white wine - 9 Syns
850ml chicken stock
400g long-grain rice

Spray a large, flame-proof casserole dish with Frylight and brown the chicken pieces on all sides. Remove from the dish and put to one side.
Lower the heat, re-spray if necessary and add the onion and pepper. Gently cook until softened.
Add the garlic and chorizo, and cook for a further 2 minutes until the chorizo has released its oils.
Stir in the tomato puree and cook for another minute.
Return the chicken to the dish, along with the thyme, white wine and stock.
Bring the liquid to the boil, then cover the dish with a tight fitting lid, lower the heat and cook for 30 minutes.
Tip in the rice and stir well. Cover and cook over a gentle heat, stirring occasionally, for a further 15 minutes, or until the rice is cooked and has absorbed most of the liquid.
Remove from the heat and leave the dish to stand for about 10 minutes, to absorb any remaining liquid.
Season to taste.
 
STEAK AND MUSHROOM STROGANOFF - Serves 2

Syn Free

1 red onion, chopped
2 garlic cloves, finely chopped or crushed
1 tsp paprika
1 green pepper, deseeded and chopped
200g mushrooms, sliced
2 tbsp. red wine vinegar
150ml beef stock
200g lean rump steak, cut into strips and all visible fat removed
150ml FF fromage frais

Spray a large frying pan well with Frylight and fry the onion until softened.
Add the garlic and paprika and cook for 2 minutes.
Add the pepper and mushrooms and cook until softened.
Add the vinegar, boil to reduce until almost evaporated, then pour in the hot stock and bubble until slightly thickened.
Add the beef and cook for 2-3 minutes or more, depending on how well you like it cooked.
Remove from heat and stir in the Fromage Frais and season to taste.

Lovely served with rice or tagliatelle and some mange tout and baby sweetcorn.
 
BLACK BEAN CHILLI - Serves 4

1.5 Syns per serving

4 garlic cloves, chopped
2 large onions, chopped
3 tbsp. sweet paprika
3 tbsp. ground cumin (obviously, add less if you're not mad on the taste)
3 tbsp. cider vinegar
2 level tbsp. brown sugar - 6 Syns (haven't tried it with sweetener but can imagine it might alter the taste and it's not bad divided between 4 people)
2 x 400g cans chopped tomatoes
2 x 400g cans black beans, drained and rinsed

Spray a large cooking pot well with Frylight and cook the garlic and onions until almost softened.
Add the paprika and cumin and cook for a few minutes.
Then add the vinegar, sugar, tomatoes and some seasoning. Cook for 10 minutes.
Tip in the beans and cook for a further 10 minutes.
Serve with rice.

Lovely topped with a HEX portion of crumbled Feta cheese, chopped spring onions and sliced radishes, if you like them. Also good with a blob of FF Greek yoghurt to accompany.
 
SLOW-COOKED BEEF WITH GNOCCHI - Serves 4

11 Syns for the whole recipe

450g lean boneless shin or chuck steak, cut into 2.5cm/1 inch cubes.
Half a teaspoon of cayenne pepper
1 tsp paprika
1 large onion, chopped
2 large cloves of garlic, finely chopped
2 x 400g cans chopped tomatoes
200ml hot vegetable stock
1 tbsp. light brown sugar - 3 Syns
1 tbsp. tomato puree
1 x 400g pack fresh gnocchi - 8 Syns

Place the beef in a large plastic food bag. Add the seasoning, cayenne and paprika. Seal the bag and shake well to coat the meat in the spices.
Spray a large non-stick frying pan well with Frylight.
Cook the beef for 4-5 minutes, in batches, until brown on all sides. Transfer to a 1.7 litre/3 pint heatproof casserole dish.
Re-spray the frying pan and cook the onion and garlic for 3 minutes. Spoon into the casserole dish.
Add the tomatoes and stock, sugar and tomato puree. Bring this to the boil, reduce the heat, cover and simmer for two to two and a half hours.
Ten minutes before the end of the cooking time, add the gnocchi.

Sometimes I add in peppers and mushrooms and, occasionally, a sprinkling of cinnamon. If you still have a HEX A to use up, it's lovely with cheese sprinkled over the gnocchi too. Great with a chunk of HEX crusty bread.
 
HOISIN BURGERS WITH SWEET PEPPER RELISH - Serves 4

2 Syns per burger

450g extra lean mince
2 tbsp. hoisin sauce - 2 Syns
1 clove of garlic, crushed

For the sweet pepper relish.

1 small orange or yellow pepper, deseeded and finely chopped
Quarter of a red onion, finely chopped
1 tbsp. flat leaf parsley, freshly chopped
4 level tbsp. plum sauce - 6 Syns

In a large bowl, mix all the burger ingredients together and season with salt and black pepper.
Using slightly damp hands, shape the mixture into four burgers. Cover and chill in the fridge for at least 20 minutes.
Meanwhile, in a small bowl mix all the relish ingredients together and set aside.
Once chilled, cook the burgers on a pre-heated grill for 6-8 minutes each side, or until the juices run clear and the burgers are thoroughly cooked through.

Serve in HEX bread rolls with salad and the sweet pepper relish.
 
LEMON AND ROSEMARY STICKY MAPLE CHICKEN - Serves 4

0.5 Syns per serving

4 skinless chicken breasts
2 lemons, juiced and zested
2 cloves of garlic, finely chopped
2 shallots, finely chopped
3 sprigs of fresh rosemary, chopped
1 level tbsp. of maple syrup - 2 Syns

With a sharp knife, slice three quarters of the way through each chicken breast lengthways. Place half the lemon zest and juice, the garlic, shallots and three quarters of the chopped rosemary in a plastic food bag.
Spray the chicken with Frylight, season with salt and pepper and add to the bag. Seal the bag then rub all the ingredients into the chicken breasts. Chill in the fridge for at least an hour.
Next pre-heat the grill to a moderate heat. Open the sliced chicken breasts out and lay them on the grill pan and cook for 3 minutes on each side.
Meanwhile, mix together the maple syrup, remaining rosemary and the remaining lemon juice and zest.
Brush this mixture over the chicken, on both sides and cook for a further minute on each side.
Once thoroughly cooked through, serve immediately.

Lovely with SW roast potatoes and lots of fresh veggies.
 
Thanks so much again to Doreen, who has now finished patiently adding page numbers to all the recipes on my thread! It was so difficult to find recipes before and I just didn't know how to do it so she kindly stepped in and has even offered to keep an eye on any further recipes I submit and will add them onto the end of the index. Brilliant!
