Delicious meals with minimum ingredients.

MOZZARELLA AND CHICKEN PASTA - Serves 2

Syn Free, if using Mozzarella as HEX's

300g whole-wheat pasta
100g cooked, sliced chicken
130g reduced fat Mozzarella
300g passata with garlic

Cook the pasta according to pack instructions.
Whilst cooking, heat the passata, adding the chicken slices and bringing to the boil. Simmer gently until thoroughly heated through.
Add to the pan the cooked, drained pasta and the torn Mozzarella. Heat over a medium heat, then serve in warmed bowls with black pepper sprinkled over.

Could also add in some cooked mushroom slices, halved cherry tomatoes and some cooked bacon. Maybe a sprinkle of paprika too.

Love this for a quick lunch.
 
MUSTARD, SOY AND HONEY SKEWERS - Serves 4

Approx. 1.5 Syns per serving

2 tbsp. reduced salt light soy sauce
2 level tbsp. runny honey - 5 Syns
1 level tbsp. wholegrain mustard - 1.5 Syns
4 skinless chicken breasts, cut into bite size pieces

Mix together the soy sauce, mustard and honey and marinate the chicken pieces in the mixture for at least 15 mins.
Thread the chicken onto 4 skewers and grill, under a moderate heat, on oiled foil for 12 mins or until thoroughly cooked through, turning to cook evenly.

I haven't been right through this thread, so I don't know if anyones already posted something similar. But my recipe for corned beef hotpot only has 4 ingredients and it is super easy to make, so I thought I'd add it on here. I am the only one doing SW at home, so the following makes enough for 1 person:

- 100g Princes lean corned beef (2 Syns), diced
- 2-3 medium potatoes, peeled and sliced
- A medium onion, peeled and sliced
- A Knorr beef flavour stock pot

Then all you do is layer the corned beef, onion and potato in an oven proof dish. I start with a layer of corned beef and onion and then a layer of potatoes, until all of the ingredients are used up and the final layer is potato. Then make up the stock pot with about 200ml boiling water and pour over the hotpot. Cook on a medium shelf in the oven on about 200, for approx 30 minutes. Voi la!

STICKY CHICKEN THIGHS WITH FRIED RICE - Serves 4

2 Syns per serving

8 level tbsp. Newman's Own Sticky BBQ Honey Sauce - 8 Syns
12 skinless chicken thigh fillets
270g easy cook basmati rice
100g frozen peas
4 spring onions, sliced
2 cloves of garlic, crushed
2 eggs, beaten

Toss the chicken thigh fillets in half the BBQ sauce and place on a rack over a baking tray and bake in a pre-heated oven 180C/Gas 4 and cook for 40 minutes, basting with the remaining BBQ sauce throughout the cooking.
Meanwhile, cook the rice according to pack instructions, adding the peas 2 minutes before the end of cooking. Drain.
Spray a wok or large frying pan with lots of Frylight and cook the garlic and spring onion for 5 minutes, before adding in the rice and peas. Also add in the beaten egg, season and stir until the egg is cooked.
Serve immediately with the chicken.
 
STICKY ASIAN CHICKEN - Serves 4

Appox. 2.5 Syns per serving

4 tbsp. reduced salt soy sauce
3 level tbsp. runny honey - 7.5 Syns
3 level tbsp. reduced sugar + salt tomato ketchup - 1.5 Syns
1 tsp. ground ginger
4 skinless chicken thighs and 4 skinless chicken drumsticks

Pre-heat the oven to 220C/Gas 7.
Mix the soy sauce, honey, ketchup and ginger together in a bowl.
Spoon or brush the mixture over the chicken and place on the grill rack, which has been covered in foil and bake for 20-25 minutes or until thoroughly cooked.

Lovely with baked potato stuffed with HEX cheese and a colourful salad.
 
HONEY, SOY SALMON - Serves 2

2.5 Syns for the recipe

2-4 salmon fillets
1 tbsp. reduced salt soy sauce
1 level tsp. ground ginger
1 level tbsp. runny honey - 2.5 Syns

Pre-heat the oven to 200C/Gas 6.
Mix together the marinade ingredients and pour over the fillets in an oven-proof dish.
Bake for 15-20 minutes, basting occasionally.
Serve with the marinade spooned over the salmon.

Couldn't be bothered even pan-frying the salmon tonight (lazy) so threw together this quick marinade, crossed my fingers and hoped for the best! :D Luckily, we both enjoyed and had the salmon with petit pois and spicy SW wedges. :)
 
SPICY BAKED SAUSAGES - Serves 4

Approx. 1 Syn per serving

8 Syn Free SW sausages
3 level tbsp. reduced sugar/salt tomato ketchup - 1.5 Syns
2 tsp. Worcester sauce
1 level tsp. dry mustard powder - or to taste
2 tsp. vinegar
1 level tbsp. brown sugar - 3 Syns

Pre-heat the oven to 200C/Gas 6.
Lie the sausages in an ovenproof dish and slit each one lengthways.
Mix the remaining ingredients until well blended.
Spoon the mixture into each sausage.
Bake for 30 minutes or until cooked through.
Drain off any excess fat before serving.

Lovely served with roasted veg (especially vine tomatoes) and garlic mash.

YOGHURT BAKED CHICKEN - Serves 6

Syn Free

450g FF Greek yoghurt
1 small onion, chopped
Juice of half a lemon
2.5cm piece of root ginger, peeled and chopped
Half a fresh green chilli, deseeded and chopped
1 tsp. ground turmeric
2 tsp. ground cumin
Quarter to half tsp. cayenne pepper
Half tsp. ground cardamom
1.1kg skinless chicken pieces, scored

Put all the ingredients, except the chicken, into a food processor with a pinch of salt and blend until smooth.
Mix the chicken into the yoghurt mix, in a large bowl, ensuring all pieces are covered.
Marinade for about 8 hours or, if possible, overnight in the fridge, covered.
Preheat the oven to 220C/Gas 7.
Line a shallow oven tray with foil and set a rack over it. The one from the grill will do.
Remove the chicken from the marinade, shaking off any excess.
Lie the chicken on the rack, meatiest side up, and bake for 20-25 minutes, turning once, or until thoroughly cooked through. Make sure the juices run clear.

Lovely with rice and roast veg. This is quite a mild taste so, obviously spice it up to meet your tastes. I sometimes add in some garlic or up the cayenne.
 
CHICKEN BAKE - Serves 6

2 Syns per serving, if using the breadcrumbs and cheese as HEX's or parts of! Divided between 6 it's only a little piece of everyone's HEX's! :D

6 skinless chicken breasts or boneless thigh fillets
2 tbsp. butter - melted - 12 Syns
1 cup of breadcrumbs - make by blitzing 2 slices of 800g size bread in the food processor and then leaving the crumbs spread out on a baking tray overnight, open to the air, so it dries up.
40g grated tasty cheese
1 tbsp. chopped parsley
4 rashers of bacon, all visible fat removed and finely diced
1 tsp. crushed garlic
1 tbsp. Worcester sauce

Pre-heat the oven to 180C/Gas 4.
Lie the chicken flat in a baking dish.
Combine all the remaining ingredients and mix well.
Tip over the chicken and press onto it gently.
Bake for 30-50 minutes or until thoroughly cooked through and the topping is golden.

This is so yummy and we usually have it with baked potato or SW wedges and salad.
Can use BBQ sauce instead of the Worcestershire but don't forget to Syn it.

CHORIZO AND BEAN STEW - Serves 4

Approx. 3.5 Syns per serving

200g diced chorizo - 13 Syns
1 red onion, chopped
2 cloves of garlic, crushed
1 red chilli, deseeded and chopped
15g thyme, leaves picked and chopped
400g can chickpeas, drained and rinsed
400g can mixed beans in chilli sauce
400g can chopped tomatoes
200ml chicken stock

Heat a large pan and add the chorizo. Fry until just crisp. Remove with a slotted spoon, leaving the chorizo oil behind.
Add the onion, garlic and chilli to the oil and cook gently for 5 minutes.
Add the thyme, cooked chorizo, chickpeas and beans to the pan and cook for 2 minutes.
Stir in the chopped tomatoes and stock and simmer, covered for 10 minutes.
Remove the lid and simmer until the stew reaches the thickness you require.

Lovely served as a filling for jacket potatoes and sprinkled with a HEX portion of grated cheese.

This is a take on a Sainsbury's recipe, which we are having this evening! :)

BROWN SUGAR BEEF FOR THE SLOW COOKER - Serves 4

Approx. 2.5 Syns per serving

500g stewing steak, diced and all visible fat removed
2 tbsp. flour - 7 Syns
4 level tbsp. tomato puree
1 tbsp. Worcester sauce
2 tsp. brown sugar - 2 Syns
1 rounded tsp. mustard powder
1 onion, chopped
1 mugful of beef stock

Mix all the dry ingredients together and toss the stewing steak in it.
Put the stewing steak into the slow cooker, sprinkle over the dry ingredients and add the beef stock.
Add a pinch of salt and stir together.
Cook on High for 5-6 hours.

I sometimes throw in some veg with this as well but is lovely served with mash and green beans/carrots.
 
PASTA WITH SPICY TOMATO AND BACON - Serves 4

1.5 Syns per serving, if using the cheese as a HEX

1 large onion, finely chopped (or use frozen, chopped onion as it softens MUCH easier in Frylight)
2 cloves of garlic, crushed
150g bacon, all visible fat removed and chopped into small pieces (use scissors)
400g can chopped tomatoes
1 tsp dried chilli flakes, or to taste
150ml red wine - 6 Syns
350g dried pasta shapes
100g grated cheese, taken from HEX's - Parmesan or Cheddar are best

Spray a large frying pan well with Frylight.
Fry the onion, garlic and bacon for 5 minutes.
Add the tomatoes, chillies and red wine. Simmer for 10-15 minutes, or until the sauce has thickened slightly.
Meanwhile, cook the pasta according to pack instructions. Drain and mix with the sauce.
Season with salt and pepper to taste.
Sprinkle with the cheese and serve immediately.
 
BACON WRAPPED SAUSAGES WITH CHEESY POTATO CAKES - Serves 4

3 Syns per serving (but well worth it!)

8 Syn Free SW sausages
450g potatoes, chopped
8 rashers of bacon, all visible fat removed
4 large tomatoes, halved
1 tbsp. Flora Extra Light - 1.5 Syns
25g Cheddar cheese, grated - take from HEX's
2 tbsp. chopped parsley
3 tbsp. seasoned flour - 10.5 Syns

Pre-heat the grill.
Boil the potatoes.
Wrap the sausages in the bacon rashers and grill for 20 minutes, turning occasionally.
Add the tomatoes to the grill after the first five minutes of cooking the sausages. Keep hot.
Drain the potatoes, mash with the Flora and cheese and maybe a splash of milk.
Allow to cool slightly and shape into 12 patties. Coat in the seasoned flour.
Spray a large frying pan well with Frylight and cook the potato cakes for about 3 minutes on each side or until golden.

4 good-sized skinless chicken breasts
2 cloves of garlic, crushed
1 tbsp. paprika
1 medium courgette, chopped
1 small pepper, deseeded and chopped
8 chestnut mushrooms, sliced
50-100g diced chorizo - 4 - 6.5 Syns
400g can chopped tomatoes
50g grated cheese of your liking, taken from HEX's. I use mature Cheddar.

Pre-heat the oven to 180C/Gas 5.
Put the chicken breasts into a large casserole dish and sprinkle with the garlic and paprika.
Add the chopped vegetables and chorizo and pour the tomatoes in.
Sprinkle with the cheese.
Cook in the oven for 30 - 60 minutes (depending on size of chicken breasts) or until the chicken is thoroughly cooked through.

I sometimes add in a can of cannellini beans and swap the chorizo for chopped ham or bacon, obviously lowering the Syn value but, I must admit, I just adore chorizo! :D Occasionally, I've added in some chilli powder too.

Lovely with HEX crusty bread, rice, pasta or good old mash! :)
