Delicious meals with minimum ingredients.

SPICY LAMB MEATBALLS - Serves 4

Syn Free

400g extra lean minced lamb
1 small onion, finely chopped (or use frozen)
1 clove of garlic, crushed
Quarter of a bunch of flat-leaf parsley, finely chopped
Small handful of a bunch of mint leaves, chopped - could use the Lazy Herb range for these too, I suppose.
1.5 tbsp. soy sauce
Half tsp. ground coriander
Half tsp. ground cumin

Toast the coriander and cumin by dry-frying in a non-stick frying pan for a few minutes. Tip into a large bowl.
Add the rest of the ingredients, along with half a teaspoon of black pepper and quarter of a teaspoon of salt. Mix well, using your hands.
Shape the mixture into golf-ball sized meatballs.
Pre-heat the oven to 180C/Gas 4. when ready to cook the meatballs.
Spray a non-stick frying pan well with Frylight and heat over a medium heat. Add the meatballs and cook until coloured all over.
Transfer to a baking tray and continue to cook in the oven for 10-15 minutes or until thoroughly cooked through.

These are really tasty, served on a bed of boiled rice with a tomato sauce over. I use the sauce from the Cod in Tomato Sauce recipe on page 77 of this thread. It is easy, delicious and also Syn Free! :)
 
TOMATO AND BASIL SAUCE - Good with pasta, sprinkled with HEX grated cheese or with the meatballs above.

Syn Free

2 medium onions, finely chopped
8 tsp. finely chopped fresh garlic
6 medium fresh tomatoes, seeded and chopped
4 tbsp. tomato puree
6 tbsp. freshly chopped basil leaves

Spray a large pan well with Frylight. Cook the onion and garlic until the onion has softened.
I usually use fresh onion for this, not frozen, but start them off in the microwave, with a splash of water, so they soften quicker in the Frylight.
Add the tomatoes, puree, 4 tbsp. of basil and salt, to taste. Continue cooking for about 2 minutes or until the mixture comes to the boil.
Reduce heat to a simmer and cook, stirring occasionally, for 10-12 minutes or until the tomatoes have softened.
Remove from the heat and stir in the remaining basil.

FIVE SPICE BEEF NOODLES - Serves 4

3 Syns per serving. This is due to the type of noodles used. Have tried dried noodles but nowhere near as nice. Of course, you may disagree and be able to save yourself the Syns.

2 x 300g packs Amoy Straight to Wok Medium Noodles - 12 Syns
1.5 tbsp. reduced salt soy sauce
300g sirloin steak, cut into thin strips
2 tsp Chinese five-spice powder
1 red pepper, deseeded and sliced
1 green pepper, deseeded and sliced
1 large carrot, thinly sliced
75g mangetout, sliced
2 large cloves of garlic, sliced or crushed
200ml reduced salt beef stock

Toss the beef in half a teaspoon of black pepper and the five spice powder.
Spray a wok or large frying pan well with Frylight and stir-fry the beef until just browned, then remove from the pan.
Re-spray the pan and add the vegetables and garlic, stir-frying until just cooked.
Return the beef to the pan, with the stock and noodles.
Stir until the noodles have separated and the stock has been absorbed.
Add the soy sauce and serve immediately on warmed plates.
 
SIMPLE CHICKEN PASTA - Serves 4

Syn Free, if using the cheese as parts of HEX's.

300g dried pasta shapes
2 skinless, large chicken breasts
2 cloves of garlic, crushed
400g can plum tomatoes
4 mushrooms, thinly sliced
125ml chicken stock
Handful of fresh basil leaves, torn
80g grated, fresh Parmesan

Cook the pasta according to pack instructions.
Meanwhile, thinly slice the chicken breasts and season with salt and black pepper.
Spray a large frying pan well with Frylight and cook the chicken pieces for 5-7 minutes, turning occasionally.
Add the garlic and cook for 2 minutes.
Pour in the chicken stock, bring to the boil, then turn the heat down to a gentle simmer for a couple of minutes.
Add the tomatoes, breaking them down with a wooden spoon. Add in the basil leaves.
When the pasta is cooked, take out a cupful of the pasta water and add it to the tomato sauce. Drain the pasta.
Add the Parmesan to the tomato sauce and stir well.
Tip the drained pasta into the pan and stir everything together well.
Serve with a few fresh basil leaves on top, with a little more grated Parmesan too.

This is really easy and tasty. I sometimes stir a tablespoon of pesto through it at the end of cooking.

Red pesto - 1 tbsp. = 2.5 Syns
Green pesto - 1 tbsp. = 3 Syns
 
GARLIC AND ROSEMARY POTATO SALAD - Serves 4

Syn Free

250g 0% Total Greek yoghurt
500g new potatoes
1 whole bulb of garlic
2 sprigs of rosemary
Paprika to garnish

Pre-heat the oven to 200C/Gas 6.
Cook the potatoes until tender. Drain and put into a Frylight sprayed roasting tin.
Add the finely chopped rosemary, season and spray well with Frylight.
Cook until golden - about 30-40 minutes.
While the potatoes are roasting, bake the bulb of garlic until brown and soft - about 10-15 minutes. Allow to cool.
Remove the potatoes and put in a large bowl, with all the rosemary. Allow to cool a little, then add the yoghurt, stirring together gently.
Cut the top off the cooled bulb of garlic, then squeeze out the pulp, mixing it gently into the potato and yoghurt mixture. Season to taste and serve garnished with a sprinkling of paprika, if liked.

ROASTED TOMATO SALSA

Syn Free

4 medium tomatoes - halved
1 red pepper - halved and deseeded
3 Jalapenos - Asda seem to sometimes have fresh ones in and they can be found in Asian grocery shops. If all else fails, Tesco's green chillies are supposed to be very similar.
2 cloves of garlic, crushed
4 spring onions, finely chopped
2 tbsp. fresh coriander, finely chopped
Juice from 1 lime

Put the tomatoes, pepper and Jalapenos under a medium grill and cook until the skins blacken and start to split. Remove from the grill and allow to cool.
Skin and de-seed the tomatoes.
Remove the skin and stem from the pepper and Jalapenos.
Chop all the ingredients finely and mix together with the crushed garlic, chopped spring onions, coriander, lime juice and a pinch of salt.
Chill and serve as a dip or over chicken, steak, etc.

You'll never buy ready made salsa again! :D

TOMATO SALSA (This one requires no roasting so is much quicker to make).

Syn Free

2 large tomatoes
1 tbsp. finely chopped red onion
1 large green chilli, deseeded and finely chopped
2 tbsp. fresh coriander, finely chopped
Juice of 1 lime

Combine the chopped tomatoes, onion and chilli with the chopped coriander and squeeze the fresh lime juice over.
Season to taste with salt.

CHILLI BBQ SAUCE

7.5 Syns for the whole recipe - so not much per tbsp. when serving with your SW burgers, etc. :D

5 level tbsp. reduced salt and sugar tomato ketchup - 2.5 Syns
2 level tbsp. runny honey - 5 Syns
3 tbsp. salt reduced soy sauce
3 tbsp. cider vinegar
300 ml chicken stock
1 tsp. tomato puree
1 tsp. smoky chilli powder - I got mine from the specialist bit in Sainsbury's, in a little foil packet.

Combine all the ingredients in a pan, bring to the boil, then simmer rapidly, stirring frequently, until the desired thickness is reached.
Pour into a clean jar with a lid, when cooled, then keep in the fridge.
 
TANDOORI CHICKEN BURGERS - Serves 4

Syn Free

125g FF natural yoghurt
Juice of half a lemon
3 cloves of garlic, crushed
2 tsp. finely grated root ginger
1 tsp. ground cumin
1 tsp. hot chilli powder (or whichever strength you prefer)
1 tsp. ground coriander
Half tsp. ground turmeric
2 skinless chicken thighs, halved crossways

Combine the yoghurt, lemon juice, garlic, ginger and spices in a medium-sized bowl.
Add the halved chicken thighs, turning until fully coated.
Cover and put in fridge for at least four hours but, preferably overnight.
Spray a large frying pan well with Frylight and place over a high heat.
Cook the chicken thighs for about 4 minutes on each side or until cooked through and golden.
Serve on HEX bread rolls with salad, red onion and maybe some Synned mango chutney.

Patak's Mango Chutney - 2 level tbsp. = 3 Syns.
 
SPICY DRUMSTICKS - Serves 4

1.5 Syns per serving

8 skinless drumsticks
1 tsp. cayenne pepper
1 tsp. paprika
9 cloves of garlic, crushed
2 red chillies, deseeded and finely chopped
Half tsp. dried thyme
Half tsp. dried parsley
1 tbsp. olive oil - 6 Syns - Yes, you do need it for this recipe! :D


In a small bowl, mix together all the ingredients, except the chicken.
Combine to form a paste.
Rub the mixture generously over the chicken and leave to marinate for at least 2 hours but, preferably overnight, in the fridge.
Grill, sauté or BBQ the drumsticks gently until thoroughly cooked through.

Lovely served with lime juice squirted over, a jacket potato stuffed with HEX grated cheese and a side salad.

SLOW COOKER LASAGNE - Serves 4. Modified from an Allrecipes recipe.

Syn Free, if using 4 x HEX's for the cheeses

450g extra lean mince
1 onion, chopped
2 cloves of garlic, crushed
800ml passata
Tomato puree to taste
1 tsp. dried oregano
350g BGTY (or similar) cottage cheese
Dried lasagne sheets
195g reduced fat Mozarella - equivalent of 3 x HEX's
40g grated, reduced-fat mature Cheddar - 1 x HEX

I don't usually pre-cook anything I put in the slow cooker but this definitely needs it.

Spray a large frying pan well with Frylight and cook the onion, garlic and mince until browned. Drain off any fat.
Add the passata, tomato puree, oregano and a pinch of salt and stir until well mixed. Cook until heated through.
In a large bowl, mix together the cottage cheese, Mozarella and grated Cheddar.
Spray the slow cooker with Frylight to help with the cleaning afterwards. :)
Spoon a layer of the mince mixture onto the base of the slow cooker. Add a double layer of the uncooked lasagne sheets, breaking them, if necessary, to fit into the cooker.
Top the pasta with some of the cheese.
Repeat the sauce, pasta and cheese layering until everything is used up. Finish with a sauce or cheese layer.
Cover and cook on Low for 4-6 hours.

I usually add in some sliced mushrooms and diced bacon too, cooking them along with the mince mixture, before adding to the slow cooker.

Lovely with baby roasties and a crunchy salad.

VEGETABLE RISOTTO - Serves 4

1.5 Syns per serving

250g risotto rice
4 rashers of smoked bacon, all visible fat removed and chopped
450ml hot vegetable stock
4 shallots, sliced
4 cloves of garlic, crushed
1 tbsp. olive oil - 6 Syns. You definitely need to use this instead of Frylight for this recipe.
Small can of sweet-corn
100g mushrooms, sliced
1 red pepper, deseeded and chopped
1 courgette, thinly sliced

Heat the olive oil in a large pan and sauté the shallots, bacon pieces and garlic until the shallots begin to soften.
Add in the risotto rice, courgette, and half the hot vegetable stock. Cook for 5 minutes.
Add in the corn and half of the remaining stock.
Cook for 5 more minutes.
Add the mushrooms, the remainder of the stock and seasoning to taste.
Cook until all the liquid has been absorbed.

This risotto is delicious served with rocket leaves and sprinkled with a HEX of grated Parmesan and black pepper.
Once asparagus comes into season, which should be any time soon, I like to sometimes add about 85g asparagus tips during the final five minutes of cooking. Yum! :D
 
GARLIC MUSHROOMS - Serves 1

1 - 1.5 Syns

1 fat clove of garlic, crushed
100g mushrooms, wiped and peeled and cut into thin slices
20g extra light soft cheese, like Philadelphia - 1 - 1.5 Syns

Spray a large frying pan well with Frylight and heat over a medium heat.
Add the garlic, cook for one minute, then add the mushrooms and cook over a low to medium heat for 5 to 7 minutes.
Add the cream cheese and cook for a further 2 to 3 minutes, until the cream cheese has melted into the mushrooms.
Season to taste with salt and black pepper.

Gorgeous on a HEX portion of toast, cut from a crusty loaf.
Tastes even better if cooked in butter (if you can spare the Syns), instead of Frylight. 10g = 3.5 Syns.
 
MEXICAN RICE - Serves 2-3

Syn Free

1 mug of long grain rice
2 mugs of chicken stock
1 onion, finely chopped
1 green pepper, deseeded and finely chopped
2 green chillies, deseeded (or not) and finely chopped

Spray a large pan well with Frylight and sauté the pepper, garlic and onion, until just beginning to soften.
Tip into a food processor with some of the stock (but not too much) and blend into a smooth paste.
Re-spray the pan well with Frylight and gently fry the paste for a few minutes.
Add the rice and the remaining stock to the pan containing the paste. Bring to the boil, then turn down the heat and gently simmer, covered, for about 15 minutes or until all the liquid has been absorbed and the rice is cooked.
Fluff up the rice and leave for a couple of minutes.
