Beef and chorizo meatballs (2 syns)
A slice of parma ham
Salad
Garlic and herb chicken
Patatas bravas topped with cheese (hexa)
Smoked paprika hummus

I seriously think I need to move in with you! Tapas looks amazing, especially the meatballs. Massively impressed with the food that you make, it always looks so scrummy.

Haha thanks. The more the merrier! To be completely honest, I've kind of impressed myself a little bit with what we've been having the for the last few weeks. It makes me wonder why I didn't do this sooner - everything we've had has been so much nicer than all the greasy food we were eating before. It's been a massive wake up call. Even though I've still got a long way to go, I can't imagine going back to my old habits.

It does really help that I live with my mum though, it's not the ideal situation but we've been finding it so easy because we're doing it together. Not sure I could quite manage cooking everything all by myself all the time!

Thanks! Here's the recipe:

Beef and Chorizo Spanish Meatballs - Serves 4

1 pack of extra lean mince
1 large onion, finely chopped
60g pack of diced chorizo (8 syns)
2 lean smoked bacon medallions
2 beef oxo cubes
2 tbs tomato puree
Half a jar of roasted red peppers in brine
A tbs of bbq sauce (1 syn depending on variety)
(the rest of the ingredients are kind of however much you want of them, depending on what your taste buds like!)
Smoked paprika
Chilli paste
Garlic
Salt and pepper
Fresh coriander

Step 1: Make the meatballs! In a big bowl, squish the mince with half the chopped onion, 1 beef oxo cube, the bbq sauce, some smoked paprika, salt, pepper, garlic and chilli. Even though you can't taste test raw beef (unless your stomach is made of iron), it should smell kind of awesome. If it doesn't, add more stuff! Once it's all squished, roll into meatballs and leave in the fridge for half an hour or so.
Step 2: In a large frying pan, frylight the rest of the onions, chopped bacon and chorizo. Once it starts browning, add the meatballs one at a time and shake regularly to keep them moving and evenly cooked.
Step 3: Once the meatballs start looking like they're cooked, and the chorizo has released all it's tastiness, add some garlic, paprika and a tiny bit of chilli. Fry for another minute or so and then add about 200mls of beef stock, the blitzed red peppers and the tomato puree. Leave it to simmer for so it thickens and goes all rich and yum looking.
Step 4: Have a quick taste and check that you're happy with it. If not, season with salt and pepper or add more of anything you think is missing.

And that's it! Would be epic with rice or pasta too! x

Weigh in day tomorrow, having a minor panic (as I seem to do every week!) that I won't have lost anything. I'm also due on my star week, so I don't know if that will effect anything. I only need to lose 1lb to get my stone award, but realistically I would like to lose at least 2. Fingers crossed!

I've also run out of hifi bars! Sad times! Today's food is all a bit disjointed as we're in the process of doing our food shop, but here's roughly what I'mma be having:

Day 27: Extra easy

Banana
Sweet chili turkey chunks
Possible bowl of soup with brown bread (hexb)
Bowl of berries
Chicken, gammon, salad, chips and possible halloumi! (hexa + 3 syns for sauce)

Total syns: 3

Will update properly later! x
 
It's not til tomorrow morning Katie, feeling pretty anxious about it though! Will let you know how it goes! :)

Slight change of plans for today's food, it's now looking more like this:

Day 27: Extra easy

Banana
Hifi bar (found one in the car lol)
Bowl of berries
Small plate of mash potato, mince, onions, carrots and sprouts (3 syns)
Chicken, gammon, salad, halloumi and sweet chilli sauce (hexa + 2 syns)

Total syns: 5

Bowl of berries
Pasta with left over gammon, chicken and salad (hexa)

Banana and chocolate ice cream (5 syns)
Melon and grapes

Total syns: 7 :D

Thanks Lindsey. Really feeling motivated. :)

Just decided that instead of having a regular banana, I'm going to try myself to some banana and chocolate ice cream for 5 syns. I figure it's got to be a tiny bit healthier than regular ice cream! I've popped a chopped up banana in the freezer, so hopefully it'll be ready in a few hours to blitz with some cocoa powder and 0% greek yogurt. Can't wait! x

Thanks Aymz! Ice cream went a bit wrong, put a bit too much cocoa powder in. Woops! Should have gone for a teaspoon instead of a tablespoon! I ended up making it into a smoothie for my step dad. It's normally really awesome though.

Third time lucky with my daily intake, keeps changing!

Day 28: Extra Easy

Melon and grapes
Hifi bars (hexb)
Pasta and sauce, chicken and gammon (hexa) - No superfree :(
Mouthful of frozen banana/cocoa powder mix - this didn't go well! Put waaay too much cocoa powder in, so made it into a smoothie for my step dad! (2 syns?)
Extra lean mince, chorizo, red pepper and chilli sauce with rice (4-5 syns for chorizo! Gah!)

Total syns: 7ish

Lack of superfree, overdose of pasta and syns used when I didn't really enjoy them = bleh. The next 7 days shall be better! x
 
Day 29: Extra easy

Hifi bars (hexb)
Pasta with bacon, mushroom and spinach sauce (hexa)
Jerk chicken, spicy rice with peppers, onions and black beans, side salad (3 syns for jerk marinade)
Bowl of berries
Frozen banana, dipped in yogurt and drizzle with a teaspoon of choc shot (1 syn!)

Total syns: 4 :D
