Weigh-in tonight, and I'm not optimistic.
However, I did prepare tonights dinner in advance, making a lamb tagine in the slow cooker!
Bought some lamb shoulder fillets last night, cut them into cubes and marinaded in a selection of dry spices including paprika, ground ginger, ground coriander, cumin, turmeric and moroccan spice blend.
Left covered in the fridge overnight and then took out this morning, browned in the pan with a couple spoons of olive oil and some onions before adding a little vegetable stock. Slung the whole lot in the slow cooker with a bit more stock, a can of chopped tomatoes and a can of chick peas (drained).
Bunged in some sliced squash and sweet potato, salt pepper and a spoonful of runny honey.
Will serve tonight with warm cous cous - only a few syns in total, and possibly only 2-3 syns per person at the worst I reckon - should be good
