Spent most of the morning waiting to see the GP, my DS 6 has a nasty chest infection and he has a bad wheeze so due to our family history she has given us an inhaler for him, he seems fine in himself though so I don't think its Asthma just the effect of the nasty infection, hoping so anyway .
@slimmerwithin of course you can they are heavenly, the method is different to any other cake I have made but it works,
120g of Plain flour
140g caster sugar
40g of butter (if using unsalted butter add a pinch of salt, I use slightly salted butter so ommit the salt)
11/2 teaspoons of baking powder
1 egg
120mls milk
1/4 teaspoon Vanilla extract is best essence will do
Preheat oven to 150 c (fan oven) 170 c normal oven
Line bun tray with Cupcake cases (this makes 10 - 12 depending on the size of the case)
Put all the dry ingredients into a mixing bowl - flour, sugar, baking powder and add butter (make sure its soft), mix with a hand or stand mixer until it looks like fine breadcrumbs. Add half of the milk and mix until blended it will be thick and sticky, add the egg to the remaining milk and whisk until lighter in colour. then add the remaining milk to the mixture, add the vanilla and mix until light and fluffy, you can add more milk if necessary.
Spoon into cases until about 2thirds full and bake for 20 mins.
For Buttercream topping
250g icing sugar
80g butter
2 tbsp milk
couple of drops of vanilla
Make sure the butter is softened add the icing sugar slowly mixing all the while add milk and whisk until light and fluffy, I tend to be generous with my buttercream so I tend to add more icing sugar and a little more milk, if you are going to pipe the icing on make sure its fairly stiff so it holds its shape. Decorate how you like and last of all enjoy x
Chocolate Cupcakes are to die for if you are a Chocolate lover (like me), the only difference is that the plain flour is 100g and add 2 heaped tablepoons of cocoa powder (I use bourneville) To make chocolate icing add 2 heaped tablespoons to the icing mix.
