I made this a couple of days ago, but tweaked it slightly as last time I found the amount of chicken I added overcooked the veg.
This time I made a really light batter of cornflour (1syn per tsp) and egg white to coat the chicken, then fried the chicken in fry light until practically cooked.
I then removed the chicken and cooked the spring onions, chilli and garlic (didn't use pepper as hubby doesn't like it) and added the chicken back in right at the end to finish off. It was absolutely gorgeous and only 2 syns for 3 portions. Just like the one from the Chinese!
