Cauliflower rice egg cups

- 240g cauliflower rice (buy ready prepared or make it yourself)
- 1 egg, whisked
- 1/4 cup cheddar cheese
- 1/8 cup grated Parmesan cheese
- salt, to taste
- Pepper, to taste
- 1/4tsp garlic powder
- 6 medium eggs
- Preheat oven to Gas 8. Lightly spray a 6 hole muffin tin with cooking spray, set aside.
- Put cauliflower rice in a bowl, add the whisked egg, cheddar & Parmesan, salt & garlic powder. Divide mix into each muffin hole and firmly press in to make a cup.
- Bake approx 15-20 mins or until cheese has melted & cups are golden & edges are browned. Remove from oven; crack the eggs into each cup, season with salt & pepper, return to oven & bake until the whites are set & yolks cooked to your liking (start checking at 10mins)
- Cool for 5 mins in tin then serve.
