MEXICAN FEAST

STEAK ENCHILADA

Serves 4
450g steak
1 green pepper
1 beef oxo cube
Salt and pepper
1 onion diced
1 clove garlic crushed,
1 tsp taco spice
1 'b free' wrap each for those on Sw - tortilla wraps for anyone else.
60g cheese (1/4 hea each)
2 tins taco spicy mixed beans - these we're from tesco, but most supermarkets do mixed beans in spicy sauce
I cut some steak into thin strips , fry lighted a pan and add beef , onions, peppers and garlic. Stir fry until beef goes brown.
Add crumbled oxo cube, salt and pepper, and taco spice.
Stir fry until cooked through ( a couple of minutes)
Stir in 1 and a half tins of beans into the beef mixture .
Open tortilla wraps and spoon beef mix down the middle , carefully fold up and turn over crease side down into ovenproof dish.
Pour over rest of the beans then grate cheese over top and bake until melted.
Refried beans were from a tin - old El Paso
Guacamole - from tescos in the chiller, 93 syns for quarter of a tub, I had 2 tsp.
Indian salad - chopped cucumber, tomatoes, red onion, lemon juice and coriander
SWEETCORN FRITTERS ( from Sam c recipe )

Makes 7 ! Blooming typical its an odd number, so they work out at 2 syns for the lot. (0.285 syns for 1, I had 4 so = 1.14 syns I counted it as 1.5)
2 eggs
2 cups of sweetcorn defrosted
1 tsp Thai spice
1/2 tsp chilli powder
1 small onion chopped finely
2 tbsp finely chopped coriander
1 tbsp lime juice
2 tsp of plain flour ( this is where the 2 syns come from)
Salt and pepper to season
Mix all ingredients in a bowl, roughly blend with hand blender
Spray a frying pan with frylight
Spoon some of the mixture on e pan as if you were making small pancakes.
Flip over when ready .
