Sona's Diary- you may not like this...

I have sona, I just marinade the chicken in garlic, scallions, thyme a drop of worcester and a glass of dry whit wine, then sprinkle it with parmesan prior to grilling.
 
vicky that is the first place i had it!!! when i was younger we used to go mids for the MELA and then get a parmo on the way home!! Nowerdays u can get it from newcastle take aways aswell but its no way as nice!! Now that ive moved to blackburn i have not had it at all!! :-( im defo looking to try cook it myself! but ur right the one from mids was the bestist every!!
 
ah Sona :) Asda sell them here ready to cook with the sauce and everything but only around here though. Yum i could just eat one now. xxx

they are totally atkins frindly as far as i can tell... are u from mids??
 
i dont think the breadcrumbs or the bechamel sauce are atkins friendly lol. ill ask my friend for recipe for you, she makes her own. I live about 10 mins away from middlesbrough :)
 
Well i was officially cheating when i was in newcastle but i think if i made it myself i would stick to the legal stuff! miss out the breadcrumbs etc!

my thread gets buried when ive been away a couple fo days!
Hope ur all doing well! Ive had a good lazy weekend!
Finally got round to cooking the chicken parma and it was LUSH!
I havent fully carbed out the recipie yet as this was just a tested!
It doesnt taste the same as shop bought but still very nice!
maybe also steam the chicken instead of shallow fry next time!

So i used 1 chicken breast and cut in to three thin strips width wise.
I sprinkled a little cajun spices on them and shallow fried till cooked / slightly brown.

1/3 plum tin (3.1c) tomato with some water and spices - simmerd this for a while till all messed and mixed. And i used normal cheddar not actual parma cheese! :-s

A little tomato mix in the bottom of the dish, layered the chicken to cover the sauce.. a little sauce over each chicken piece and a tiny dob on cream cheese.. put this under the grill for 10 mins or soo very reduced heat... spread the cream cheese a bit then sprinkled on the cheddar. Back under the grill till cheese bubbling and slightly brown.

Was reallly qick and easy to make... will give me three portions easy!
Carb wise: (i think)
tomato sauce -3.1 for the whole lot
chicken - 0
Cream cheese - im not sure but id say about 3
Cheese - 3 for the whole lot
oil used to fry - 0 i think.


= 3 carbs per portion? i think thats fair.

I had mine with a side of egg mayo and a seek kebab! VERY filling meal!

Just started at work! thought id get my stuff on here before it gets busy! had a fab weekend watching my lil boy do the telli tuby dance! well his version anyway.. cross between MJ's thriller and hopscotch is the best way to describe it! What u get up to? hows ur grand daughter?

LOL Sona, I can just picture that love. Little Olivia is lovely, she's growing so quickly it's frightening love.

No probs!! I end up pondering an idea for ages befor ei get to make it!! lolz Im kinda looking for saving the pennies ideas so need to make big batches and use at work so i dont have to buy meals at work! they are stupidly expensive.. horrid and none atkins friendly!

Anyway - next project is muffin size mix flavour quiches! All i need now is a 6 hole large muffin tray! and a few hours to play with! My idea is to make a batch of vegi quiches.. and batch of meat (chicken / sausage) and a match of 2 cheese flavours.

What u recon? any of my homies (uk based folk) know where i can pick up a large muffin tray reasonable priced?
 
try the pound shops :) or do you have home bargains near you?
 
i dont think there is a home bargins near me.. ive found one on amazon just gona order two trays so can do 12 cups at once
 
oooh - can you freeze them?
 
Yeh i think so but cream doesnt freeze very well so im gona check.
i have seen on line people make them as muffins and freeze them I duno weather to use cream or soy milk.. hmm
