toffee muffin help needed... Hi, i made the toffee muffins last night but they were a bit of a flop :-( they were more like an egg custard than a muffin .. any advice ??
Oh my oh my - oat bran muffins
Finally made some and they are just yummy. I used recipe from Dukan site:
6 tablespoons oat bran
2 eggs
1/2 teaspoon baking powder
5 tablespoons yoghurt
I added:
2 teaspoon mixed spice
1 teaspoon cinnamon
2 teaspoons Gogi berries
Made six - three days worth
Opps - yes I put candarel in too - forgot that off my list - doh!
The Gogi berries make it similar to fruitcake - well almost ;-)... - wonder what they would b like soaked in tea prior to adding?... Ummm there's a thought ;-)
I just tried this recipe but tweaked it a bit.
I added 1 tsp of vanilla essence and 2 tbs of Candarel and omitted the Goji Berries.
I cooked it at 160 deg (fan ass oven) for 15 minutes which seemed to be long enough.
These taste more like cake than the eggy toffee muffins, they are a lot drier.
I much prefer this drier version.
I just cut one in half and spread thick s/c yoghurt on it, bloomin' lovely!
They also feel more filling than the toffee ones which is a good thing, I would normally have two toffee muffins but one of these is enough (for the minute ).

My silicone cases only started sticking after i put them in the dishwasher so my new ones i only ever wash by hand
