Pasta with a tin of chopped Tomatoes, Quark, Red Onion, Cherry Tomatoes, Peppers and Mushrooms. Sprinkled with a HExA of Cheese :drool:
 
Homemade fish pie got no reciepe lol so making it up as I go along lol using swede & bns as a mash topping as on a red day :)
 
baked potato, chicken breast and salad. not that exciting but looking forward to it tbh!
 
Noodles chicken in 5 spice and salad. Been unwell today so hoping this will be ok with my tummy. Lived off dry crackers today. :-(

Serves: 4
Prep time: 30 minutes
Cook time: 1 hour

low calorie cooking spray
600g potatoes, peeled and very thinly sliced
2 leeks, thinly sliced
200g green cabbage, finely shredded
400g lean ham, all visible fat removed, roughly chopped
200ml chicken or vegetable stock
2 garlic cloves, peeled and crushed
2 tsp dried parsley
1 bay leaf
salt and freshly ground black pepper
110g reduced fat Cheddar cheese, grated

1. Preheat the oven to 180°C/Gas 4. Lightly spray a 2 litre gratin dish with low calorie cooking spray.

2. Mix the potatoes, leeks, cabbage and ham together in the dish and spread out in an even layer.

3. Mix together the stock, garlic and dried parsley. Pour the stock mixture over the vegetable and ham mixture and tuck the bay leaf in the middle. Season to taste and sprinkle over the cheese.

4. Loosely cover with foil and bake in the oven for 30-40 minutes. Test the potatoes with a knife - they should be just beginning to soften.

5. Remove the foil and bake for another 20-25 minutes, spooning some of the stock mixture over every now and again until the potatoes are tender. Cool for 15 minutes before serving, delicious with a shredded cucumber salad.
 
Ooooo had one of the best teas yet! Can't believe I've not done it before? Chicken, mushroom chow mien. Devine ;)

I know us too but mum got some on a deal 3 packs of any meat for a tenner and with that you get 2 large steaks of lamb and just cut fat off around it. But yeah it is sooo expensive! :-( that's why we usually stick to chicken. Cheap cheerful and low fat. You'd be able to do the recipe with chicken too. X

My Mum arrived with a small lamb joint today, honestly I nearly snatched her arm off lol. I'm saving it for Sunday. To be honest not even affording much chicken recently either. But I am quite happy with vegetarian meals, then a meat craving smacks me in the face ;) I so enjoyed my chicken chow mien tonight ;)

Dinner tonight, very simple, cheap pollock on a bed of mixed salad, grilled cherry toms, 1 syn of balsamic glaze, all topped with a load of cracked pepper
