Mine is the frozen chargrilled Mediterranean mixed vegetables from Sainsbury's. There's no added oil and it makes a really easy dinner. Just bung them in a oven cook bag, add chicken thighs or other meat (or leave out if vegetarian), I add a sliced red onion, couple of garlic cloves, mixed herbs, salt & pepper and dried chillies. Roast in the oven for an hour or so at 180.
Because it cooks in the oven bag it makes a really nice jus too.
Nice with potatoes or rice. Even more simple is just mixing through some cooked pulses like puy lentils or chickpeas just before serving.
