Daz FINALLY has a food diary

Once you get a cooker you can make meals & freeze some then you're not making something for 1 person, could you pick up a slow cooker from somewhere? or a microwave?

Yes, pretty much what i do anyhow, still living off of cottage pie and lasagne that i cooked up a couple of weeks ago. Freezer has stacks of chicken pork and beef in it, and i have a microwave, one of them combi things that is also an oven and grill, but its not the same. If i could get used to it i would buy a hob and do without a cooker. I shall persevere for now and see if i can get to grips with it. But its amazing how necessary a hob is, but you don't realise until there isn't one.

My take on the half syn roulade (which i do think is really awful). Exactly the same as the roulade EXCEPT rather than using quark for the filling I spread some strawberry muller light over the inside and then added chopped strawberries. Once rolled I then put more chopped strawberries on top and the rest of the muller light. Still not convinced with the texture of the roulade but it is a lot more acceptable to me like this than it is with quark as the filling.

What's the roulade made out of?

Easier for me to put the recipe here. Nice and easy to make, but i just struggled to have quark as a filling, so modified it.

Ingredients
· 4 medium eggs
· 1 tsp baking powder
· 1 tsp vanilla essence
· a tub of quark (250g)
· 3 tbsp of sweetener (level not heaped)
· Raspberries (or any other Syn free fruit)
Instructions
1. Separate the 4 eggs into two bowls, yolks and whites
2. Add ½ tub of quark, sweetener, vanilla essence & baking powder to the yolks
3. Wisk into a creamy consistency and put to one side
4. Take the egg whites and wisk until stiff
5. Add half of the egg whites to the egg yolk mixture and stir in gently
6. Then fold the other half of the eggs whites into the mixture
7. Take an oven tray, line line with grease proof paper and spray with fry light
8. Ensure you use plenty of fry light to avoid the cake sticking to the paper
9. Pour the mixture on the tray/paper
10. Bake for 10 minutes until golden brown 180c (it doesn’t take very long to bake
11. Whilst warm peel the paper from the cake (gently) and then lay cake out to cool
12. I used a big knife underneath the paper to gently remove the cake from paper
13. While cooling take the remainder of the quark and add sweetener to taste
14. Spread the quark onto the cake (now cool) and add fruit you are using At this point i ditched the quark and used Muller light for the filling/spread.
15. I used raspberries and added them evenly across the cake and squished them
16. Then gently roll the cake up into a roll (like a swiss roll)
Cut into 4-6 pieces – or eat the whole cake yourself for ½ a Syn

1.5 off this week. Really not pleased, but again I suppose the moving into a new flat and not eating properly hasn't helped. Almost back on track now that I have a full fridge and freezer. :D

Wow, decorated the hall yesterday, lots of painting, lots of shifting (had to use a part of the divan base as a platform to get up high due to severe vertigo issues) and was dead on my feet by teatime, but still i cooked. Really don't know why these people who work all day moan about cooking when they get home. An hour in the oven while i relaxed in the bath, simples. lol.

I bought a pork joint the other day, carved it into 3 portions, and froze 2 of them for another day. The pieces are like really thick pork steaks.
Simple cooking, sprinkle fresh chopped parsley over the chop, spray with oil. Microwave enough chopped potatoes for your needs (i used one spud to get enough for one person) and place in the tin with the pork. Bake in the oven for an hour. Add some frozen mixed veg (micro for 3 minutes) and voila, a full on meal with next to no effort.

Meal looks delish Daz. I think your doing very well considering you have no proper cooker/hob. Just take it easy decorating even if it is standing on a Divan you can still get dizzy spells

Im starting to get the hang of this combi micro now, still want cooker though i think.
I still have a bone of contention with the diagnosis of vertigo. I never go dizzy, its just balance. If i look up or around while moving i will fall over, its as if my central balance system has gone, which i think is the benign vertigo part of the issues i have. Bit of a git really, the actual stroke itself has not recurred or shown any signs at all, but "alleged" benign and severe vertigo, really is annoying.

Simple tea tonight, finished the hall decorating, best mate and his wife popped round for coffee, then the parents appeared. I see nobody all week then everybody comes at once. :8855: Just a quick jacket spud with lighter than light mayo, gammon grilled with some mushrooms, and a salad of shredded lettuce, cucumber, tomatoes, sliced red onion, carrot sticks, and a garlic and herb dressing.

Simple meals are sometimes the best, or throw together ones when you dont know what you fancy.

It might be a while before you get any more visitors then lol?

On a mission now to get all the decorating done. Although i cant do the bathroom yet as waiting for OT to come in and assess it for my needs. Struggling with the bath and cant use the shower thats over it. With any luck they will help towards putting a cubicle in. Tell you, the things we take for granted, until something goes wrong. But hey ho, still alive, losing weight (slow but sure) and starting a new life, looking up at last. :D

You can only do so much Daz, just dont overdo it. Could you ask them to put you a walk in shower in? like a wet room with a chair. They did it for my mam and it made a world of difference.

Im going to attempt some wallpapering on Thurs but will have to see how I go with my back, slowly me thinks

I can cope with a shower tray/cubicle, that's what i was used to before here. And that would just be a straight forward removal of the bath and put a tray under where the shower already is. I have a plumbing background and my Father and brother are a family business of plumbers. With any luck i can get the to do the job.

I want to hang wallpaper on 2 walls, a feature wall, one in the bedroom and one in the lounge. Have only done it once before but looking forward to it.

Im only papering one wall in the living room emulsion on the other 3. Ive always done my own decorating but think I may struggle this time. I had to get the decorators to do my staircase and porch, as its a town house and too much for me to do. I'll do all the other rooms if I can manage

Fingers crossed OT will go ahead and help you
