Just made some carrot and coriander soup from the recipe book Sarah (Jim of Troy) gave me for Christmas. It's really tasty!

And I made these ham/egg/cheese muffins while I was cooking the soup...they were yummy too!!!

I don't know what the precise recipe in that book is, but it's not actually a SW book, and just in case it's got "bad fings" in, here's a totally SW friendly carrot and coriander soup, which is soooooooooooooooooooooo easy, and d'lishus:

450g Carrot
227g Potato
Large Onion
1tsp ground coriander
1l veg stock (or chicken, if you like)
1/2 pack fresh coriander leaves
fry light
salt and pepper to season

Spray a pan with fry light, fry onion for 5 mins, stir in ground coriander and potato, cook for 1 min, add carrots and stock, bring to boil, cover and simmer for 20mins. Blitz till smooth with fresh coriander, return to pan, add salt and pepper to taste.

You can thin it down with more stock or water after this, depending on how thick or thin you like your soup.

I tend to make double this quantity, and freeze individual portions.
(Or sometimes it doesn't get as far as the freezer, and I just live on it for days at a time!)

Oops, my fault Sarah, I should've said I adapted the recipe to make it SW friendly. So now we have TWO carrot and coriander soups from you lol!

Fry light
1 medium onion, finely chopped
1 garlic clove, crushed
500g roughly chopped carrots
1 litre veg stock
Pinch of freshly grated nutmeg
1 tablespoon chopped fresh coriander

Spray a saucepan with fry light, add the onions and garlic, then cover and cook gently for 10 mins without browning.

Add the carrots, stock and nutmeg, then cover and bring to the boil. Simmer gently for 10-15 mins until the veg is tender. You might need to remove the lid and reduce the stock a little.

Blend until smooth. Add the coriander and season to taste.

The recipe actually says to add cream at this point too. I think it's lovely as it is, but I imagine you could add some fat free yoghurt instead. Might try that at lunch time.



The muffins are really easy to make too Penny.

You really need a silicone muffin/cupcake tin. Just line it with thin lean ham, carefully crack a whole egg into each one, and then share out a hexA's worth of half fat grated cheese on the top. Pop in the oven (fan 180) for between 15-20 mins until the egg is cooked. So quick and easy to do! And of course if you don't want to use the cheese you don't have to :)

Thanks Penny. I must say I'm feeling it now! I couldn't get comfortable in bed last night as I was aching, and I'm still aching lol! I did consider going again today but I've decided against it now. I think it's best to have a day off and go tomorrow. This is the website if you want a look... http://www.puregym.com/ They also have a FB page. I don't know much about gyms but I did feel quite at ease there, the showers and loos etc were spotless, there was loads of equipment to try, and the staff were lovely.

PS Loving the stories about your gorgeous pup, bf's sis has just got a puppy and he reminded me of Suki, esp stories of not wanting to wear the reins... Unfortunately our pup is still not keen on walking on his own, but I'm sure he will grow to like it!!

Hi Becca and thank you for taking the time to post on my diary x

It has been two years of highs and lows but mostly lots of fun, and it's been great to share it with all the girlies (and occasional guy) on here :)

You WILL get there, believe me. Slimming World is such a good food plan that half the time you don't really feel like you're dieting at all. But we all have bad days and its great to be able to come on here and sound off! There's always someone who can offer advice and support. And then you in turn can do the same for someone else!

Ive just subscribed to your diary so we can keep in touch x

Dawn.............I love the recipes in the little book, Comfort food and am going to try at least 4 of the dishes in the next week. I particularly like the look of The Welsh Onion Cake. I can have it with poached eggs and grilled tomatoes and Paul can have it with bacon and grilled tomatoes.............yummy !!!
