Final thoughts, week 9...

all in all, a great week

* paul didn't fair so well, he has been drinking beer every night and was so lucky to STS this week, if i didn't make all his meals, am pretty sure he would have had big weight gain!

* gave all my 20+ clothes away on freecycle, it was such a good feeling

* treated myself to some new size 16-18 knickers and threw away all my *well nearly all* my bridget jones lol

* cleared wardrobe again, found 3 more tops that fit me - hooray!

* am starting to see promise now when i look in the mirror, my curves are returning, feeling a bit jessica rabbit lol!

* but best of all, my bust is smaller! hooray, not by much but the dream of my aspirins on an ironing board returning is alive again

* stocked up fruit and veg, cous cous, and the asda meat free dried packets, intend to incorporate these into my menus this week

* planning a cooking day am gonna make up huge coleslaw, cous cous cakes (don't want to open debate here but feel free to comment) and a pasta n sauce quiche

I loved this quiche (so did Paul), mac cheese pasta n sauce made up with water, couple of bacon medallions (fat less), finely chopped and fryed in fry lite, mush, dry fried, cherry toms, quartered, dry fried - mix well, add 500g cottage cheese, mix well - add 4 beaten eggs and some mixed herbs, mix well, bung in oven for about 25-30 mins - keep an eye on it tho cos top browns very quickly

Mincemeat Cous Cous Cake

tastes like SW breadpudding, I love it, Paul hates, Mum liked it!

This is malaika's recipe:
Mincemeat Couscous Cake

8 syns for the whole cake if you count the cous ous as free or 28 syns if you syn it.

4oz couscous

3 eggs
4 tablespoons sweetener
2 teaspoons of mixed spice

1 teaspoon ground nutmeg
1 teaspoon cinnamon
4 tablespoons mincemeat
juice from 1 lemon

Heat the oven to 180

Soak the couscous in boiling water (normally use double the height of couscous) add the sweetener, mixed spice, nutmeg, cinnamon and lemon juice with the water, stir and wait for it to soak in. Add the mincemeat
Whisk the eggs then add them too and mix well.
Pour into a greased loaf tin and bake for 40 mins

There are loads of different versions, I am going to try the lemon and savoury next

Chicken, Bacon & Mushroom Risotto

Didn't have a clue how to make risotto, so I looked up recipe on Recipe Section and can of came up with this - I forgotten who contributed so I can't thank.

Frylite - Cook couple of chicken breasts, fry lite some bacon, dry fry chopped mushroom.

Slice 2 red onions, 2 leeks, finely chopped, chopped garlic, add risotto rice, quick fry

Next add 4.5 pints of chicken stock. 1/2 pint at a time (this releases the starch and makes it go creamy)

Throw in chicken, bacon, mushrooms, good stir, reduce heat, cover with lid and leave for about 20-30 mins, checking and stirring regularly, add bit more stock or water if necessary

Plate up and sprinkle with HEA of parmesan cheese

YUM! never had risotto before and this is so comforting and so filling!
 
Ooh, my friend does a delicious cous cous cake. Pre SW days I used to go to hers to have cakes for breakfast. Infact the other week I did try her red beetroot cake, yellow beetroot cake and a fruitcake as a snack before lunch. I don't think I put them in my food diary either:eek::eek:
 
Steak & Onion Pie, Serves 4, SEE PICS BELOW
EE = 3
2 red onions
2 garlic cloves
Fry Light
800g lean diced beef/steak
1 level tbsp. instant smash (i used tesco value)
Lemon Thyme (fresh is best)
1 bay leaf
¼ pint beef stock made with bovril
¼ pint waterSeasoning
9oz/255g mushrooms
1 egg or fry lite butter


2 sheets filo pastry
  1. Preheat oven 200/400/Gas mark 6. Slice onions, crush garlic Fry Light for 3-4 min. Cut the steak into cubes add beef/steak to pan with 1tbsp instant mash, move around pan quickly so it doesn't catch for about 1-2 mins
  2. Add thyme, bay leaf, stock, seasoning and ¼ pint water.
  3. Quarter mushrooms, dry fry and add to pan.
  4. Bring to the boil, cover and simmer for 1½ hours. Set aside to cool.
  5. Divide the beef mixture between 4 individual pie dishes.
  6. Halve two filo sheets, scrunch up and place each 1/2 over pies, baste with a bit of egg or I just sprayed some butter fry lite over top, bake for 30 mins
  7. Serve with SW chips, mushrooms and tomatoes

Steak & Onion Pie - yum yum!

This is an old SW Magazine recipe - probably from summer 2003.

From the original recipe I've changed:
* 1tbsp cornflour substituted with instant mash
* 1sheet filo per pie - 6 syns a sheet, so I halved filo so 3 syns on EE, or use mash to make pie 100% free

This will def be featuring on our menu regularly!

I made the Pasta Quiche this week, its nice but I prefer lining the base just with sliced potatoes and doing it that way ( cheaper too :) )

Sounds like a good plan for this week. Never made the cous cous cakes but have made the chickpea one which is scrum.

Making the strozzapreti pasta thing tonight. Hope it's as nice as it sounds. x

Hope you enjoyed strozzapreti, did you use chicken or veg in the end? I really wanted it for tea today but meg has chosen a chilli chicken recipe

Oh chickpea cake - might need you to point me in direction of that recipe...
