Wednesday 12th - Green

Breakfast: Coffee & Toast 1 HEXA, 1 HEXB, 2 syns
Lunch 1: Bit of leftover curry soup before I set off, then when I got to college:
Lunch 2: Jalapeno hummus with carrots and mixed veg
Tea: Box of Middle Eastern chicken & apricot stew outta the freezer. 1 HEXB for chicken, 2 syns for apricots. Found out our other Fake-o Bento box doesn't actually keep stuff warm so I need another, boo :(
Snacks: Apple, pear, peach, Quorn slices. Then when I got in a box of blackberries in coconut Muller cos I was still bladdy hungry. And I started a glass of wine 9 syns but it was so revolting I could only drink half. I chucked the rest away :sigh: I think that's only the second time I've done that in my entire life.

Today will be chilli, yum yum :)

Hi Erm, congrats on your loss this week. Fabulous.

Just wanted to pop by, I'm a regular reader, and say hi. I can't cook as I've mentioned many times before but your food looks awesome.

One thing I did manage to try last night on your recommendation is Total 2% with honey. THANK YOU, THANK YOU, THANK YOU.

Thought maybe you were over reacting with the better than sex comparison but no. I promise to never doubt you again!

Celeriac chips next if I can find the things. You'd think living in farming country they'd be everywhere but no!

Keep up the good work, missus!

Wow! What an amazing week you've had!

Right, I have a challenge - should you choose to take it ;-)

Bake a spaghetti squash in the oven for 55 mins (place flesh side down in baking pan) at 180'C. No need for any spray or oil but salt an pepper always good and also add 3-4 tablespoons of water to pan. Fork out on to plate (edited as crap instructions first time!).

Meanwhile, fry light mushrooms, onions and chilli or chilli flakes (also a few slices of courgette if you have them). When cooked take off heat and add 6 laughing cow extra light (1/2 hexa as this makes at least two portions!). gently heat. Add forked spag squash from one half of medium squash and mix. Add as much hexa reduced fat cheddar as poss - preferably 82g for two but less if not enough left for the day. Stir. Yum yum yum yum. Please don't write off spag squash until you've tried this. :) In my opinion it's worth saving the hexas for (and I was almost poisoned by a squash). We had this with a home made burger and a few celeriac chips (red day). You could also add chopped bacon.

Onion squash is really good :) Texture like sweet potato but nicer flavour! Lovely cut in wedges and roasted!

Well done on your A.M.A.Z.I.N.G weight loss this week!!!!!

Oooooh nooooo not the sp*gh*tti Sq*ash!!!!! :hide:

Do I have to? Agghh well I suppose if its as yum as you say...? Will have to wait til next time I go Waitrose though, nobody else has it round here (neither did Waitrose last time  )

Ahhh so few squash, so much time...

Haha, love the hide behind the sofa smiley!
It's just that spag squash is pretty boring until you mix it with cheese and then it becomes a taste sensation! Forget to mention to add garlic too :D

PS. When I lived in England, we used to get an Able & Cole box every week. Can recommend! You can also set your preferences so that they don't send you certain veggies that you don't like.

I'm not keeping up...

Had lost more space in it to stuff Extra Chilli :)

And lovely roasted. Was a bit sweeter than the acorn squash, a little bit like sweet potato but not *as* sweet and soggy. Very yum.

When I handed it to the b/f he said "what's that?" I said well what do you think it is? His response: "a coconut?" :8855:

Anyway, the, er, coconut  & chilli was yumnacious! :) I dunno what I did to the chilli though, it was very runny  I don't think I did it any different to usual but I guess I must've overestimated the stock or summat  Still very yum though!

Friday 14th - Green

Breakfast: Coffee & Toast 1 HEXA, 1 HEXB, 2 syns
Lunch: Mushroom stir fry. 0.5 syn for mustard
Tea: Chicken Yassa with coconut rice and sweet roasted plantain 1 HEXB & 5.5 syns for chicken, <1HEXA for milk in rice, 2 syns for marinade, 1.5 syns for sugar on plantain
Snacks: Nectarines, snap peas, baby corn, 2 x Bovril

Well here's my plantain, they look a bit burnt but they're actually not :D it's cos I coated them in nutmeg and sugar so that's the blackened sugar, they were soft and ooooozing squidginess inside!

And here's the whole meal. Oh. My. GOD.

This was THE best curry EVER.

6246267970_8737c30c93_o.jpg

It does need editing a bit though, Im not sure it would be to everyone's taste as it is, too much citrus and vinegar for most people I think, so Im gonna make it again next week and tweak it a bit. But soooooo gooooood. I think the key was in rubbing the chicken down with lemon and salt prior to marinating, plus the mustard & vinegar in the marinade. But we shall see next week!

The coconut rice was OK, not really 'coconut' but the milk did make it 'heavier' and a lot more filling. Didn't taste whatsoever of coconut, and I could take it or leave it as to whether to bother again. Also I don't think the whole thing needed to go together, the curry didn't match the plantain at all, Id do the plantain as a dessert or with a sweeter curry next time.

I haven't recovered from the chicken yet though, Im still sucking at it in my head with the edges of my tongue, mmmmmmmmm :p

Ohhhhh Ive got to look at it again, lush lush lush!
