It's not divine or anything :D I was just a bit surprised I liked it I think as I dont like courgette and it was just a quick mid-week jobbie with nothing special in. Tastes MUCH better next day though! :)

Veggie chilli

Ingredients:
- 1 tsp extra virgin olive oil (2 syns - or use Fry Light)
- 1 large onion, chopped
- 2 or 3 cloves garlic, crushed
- 2 courgettes, sliced
- 2 large carrots, sliced
- 2 red chillies, deseeded and finely chopped
- 4 fresh tomatoes, roughly chopped
- 4 tbsp tomato puree
- 1.5 tablespoons ground cumin
- 1 teaspoon ground cinnamon
- 1 square dark chocolate (about 2.5 syns)
- 2 vegetable stock cubes
- About 500ml water - adjust to how much you think it needs
- 1 x 400g tin chickpeas, drained
- 1 x 400g tin kidney beans in chilli sauce (not drained)
- salt & pepper


Method:
- Fry onion and garlic for 2-3 min until softening
- Add courgettes, carrots and chilli for 5 min, stirring occasionally, until softening
- Add tomatoes for 5 min more, stirring until softening
- Add stock cubes, beans, tomato puree, spices, chocolate and enough water to mix it but keep it fairly thick. Season to taste
- Bring to the boil, cover and simmer for 20 min, stirring occasionally. Add more water if it gets too thick.

Serve with brown rice

Breakfast: Coffee & fruit 1 HEXA
Lunch: Veggie chilli <1 HEXB for oil, 1 syn for chocolate
Tea: Indian tomato soup with Marmite & tomato cheese twists 1 HEXB for cheese
Snacks: Coconut Muller, lychees, Muller light with cherry underlay 1.5 syns, tomato & Marmite cheese twists <1 HEXB for cheese, Muller chocolate orange

Well and truly Mullered then :D

Made the chhese & Marmite twists again, but this time I did it with tomato & pesto cottage cheese and a couple tbsp tomato puree to go with the tomato soup :drool:

Hi Erm, popped in to see your fried brie recovery. I had battered stilton once and that was divine. I love cheese!

I found a recipe today while browsing and thought it might be one you might like.

1) make your own meatballs and cook

2) 680g jar passatta, diced onion (finely) , garlic, 1 tbsp harissa paste, 1 tsp chilli powder, 1/2 juice of a lemon

cook the sauce, add cooked meatballs to it and serve with cous cous

That's almost exactly what I *AM* having actually, spooky! :eek:
Im making Morroccan meatball tagine! Home-made lamb meatballs with lemon zest & spices in (cumin, cinnamon, cayenne), then cooked in a sauce made of onion, ginger, chilli, saffron, lemon, stock, tomatoes. Its meant to go with couscous too but I dont like that so Im having bulgar wheat! Wooo you read my mind Jackie! :eek: :8855: I got mine from the Good Food mag, wheres yours from? :)

I looked at the crinkly cutters! But I wondered if Id even be able to cut a potato up with them? They look like mashers! :D Are they very easy to use? Ill order one anyway cos theyre only a couple of quid. :)

The original idea started here :)

The only syns/HEX are the cheese so it depends how much you put in and how many you divide it into.

I've done this a few times and I use different ingredients each time :) The basic mix is Smash, eggs and cottage cheese, but then you add grated cheese and any other flavours according to what you fancy. For this batch I did:

- 1 x 88g pack Smash
- 2 eggs
- 1 pot Tesco red pesto cottage cheese
- 100g low fat cheese, grated
- tomato puree, about 2-3 tbsp
- Marmite, couple of teaspoons??

Just mix the Smash, eggs, cottage cheese, tomato puree and most of the grated cheese together, knead it a bit, roll it out flat, spread a weeny bit of Marmite over the top (not much!) and sprinkle over the remaining cheese. Then cut it into strips (I made 15 I think), roll them into long sausage shapes and bake for 15-20 min until done.

I made about 15 so that makes them 1 syn each, but you can count it as part of your HEXA (or B on Green) as the only syns are the cheese. :)

If you ate them as snacks you should probably count the mash etc as syns too or it might count as food abuse and all that... ;) )

tbh next time I wont bother with all the spreading Marmite / sprinkling cheese over the top, the only reason for that was to make it look pretty, which I have failed miserably at on 3 occasions now, so next time I shall just bung the lot in all at once, Marmite and all :8855:

Mmmm soup was bordering on a seven I reckon :D I liked it better the first time I made it and it tastes loads better the next day. Its not ny favourite soup or anything though and it's dead basic, not special.

Here's the recipe in case you want to try/adapt it anyway:

Spicy tomato soup:

Ingredients:
- 3 medium onions, roughly chopped
- 2 tbsp garam masala
- 3/4 tsp chilli flakes
- 50g red lentils
- 4 cloves garlic, crushed
- 2 x 400g tins chopped tomatoes
- 4 tbsp tomato puree
- 1 litre vegetable stock
- salt & pepper to taste
- coriander & Total 2%, to serve (optional)

Method:
- Fry onions in Fry Light for 5 min until softening
- Add garlic and spices and cook for a minute
- Add everything else, bring to the boil and simmer, covered, for 20min until tender
- Top with Total 2% & coriander to serve, if you want

If you want it smooth you can just whizz some or all of it in the processor, I like mine to have a bit of chunkiness so I dont bother :)

Lunch: Spicy Quorn fillets with salad <1 HEXB & 1 syn for oil & mustard
Tea: Mama's Jamaican chicken with rice n peas <2 HEXB for chicken & oil
Snacks: Quorn slices, a pound of Brussels sprouts :whistle: , Muller light with cherry underlay 1.5 syns, 2 squares Peruvian dark chocolate 2 syns

Oh. My. God. Mama's Jamaican curry is A-MAZ-ING... :drool: The OH said it was the best curry he'd ever had.

Unfortunately made a total pigs ear of the rice n peas :rolleyes: (My Photoshop Skillz leave something to be desired too :whistle: )

Saturday 04th Feb Extra Easy

Breakfast: None, had to go for CT
Brunch: Half a slice apple-y pie, ??15 syns. Coupla spoons beans, 1 rasher bacon inc. fat 2 syns, 1 coffee w semi skimmed milk <1 HEXA
Lunch: Veggie chilli 1 syn for chocolate, <1 HEXB for oil, leftover Jamaican sauce
Tea: Morroccan meatball tagine with bulgur wheat 4 syns for lamb, 0.5 HEXB for oil
Snacks: Coffee <1 HEXA, pear, wine about 30 syns?
