Saturday 18th Feb Red

Breakfast: Coffee & toast 1.2 HEXA, 1.2 HEXB
Late Lunch: Stir fry 3 syns and a bit of gorgonzola 0.8 HEXA
Tea: Pinchitos morunos kebab with honey roasted veg 2 syns for honey
Snacks: Apples, wine about 30 syns :whoopass:

OMG - anyone who moans about superfree - you HAVE to try these veggies, they were DIVINE!!! :eek: :drool: (This is coming from the girl who until a fortnight ago retched at the thought of courgettes!) Lush, lush, lush! :drool:

It was just a trayful of light veggies roasted in honey and chillies. Amazing taste, I just dont know where it came from, not like any of the veg in it!

Sweet & Spicy Roast Mediterannean Veg
Serves 2 as a side dish

Ingredients:
- 2 red onions, peeled and wedged
- 2 peppers (1 green, 1 red), deseeded & chopped into chunks
- 1 courgette, chopped into small chunks
- 1 box baby tomatoes (about 350g)
- 2 chillies, deseeded & finely chopped
- 1 tablespoon honey (3 syns)

Method:
- Chuck all the veg in a lined tray, season generously, spray with Fry Light, cover in tin foil and roast until tender (about 15min)
- Remove the veg from the oven, pour into a bowl and add the honey. Mix well, return to the tray and roast for another 15-20min uncovered, until going brown & crispy round the edges.

Next time I might chuck some garlic in or maybe some basil/rosemary or something. Maybe sprinkle a little cheese over the top? The chilli and honey mix was just divine, couldn't believe it, just had a taste all of its own! Any soft veg would do I think.

honey goes well with soy and garlic - could try that? I love honey.. i always cost myself a few extra syns as i generally finish off with a teaspoon that goes straight in my mouth.. LOL :eek:

Lunch: Leftover Quorn curry
Tea: SW Hyderabadi chicken biryani 2 HEXBs
Snacks: Carrots, big bowl of salad 1 syn for mustard, mini Babybel light 2/3 HEXA, Muller with cherry underlay 1.5 syns, banana

Hi Ermie!
I just made the Afghan Carrot Hotpot (Got the recipe from here I seriously upped the spices, (as I usually do anyway), apart from the chilli as I used a frozen cube it was hot enough. I didn't realise until tonight that Chana Dal is NOT the same as Yellow Split Peas and was waiting for them to mush down. Anyway thanks for the diary I am loving your photos and you've inspired me to use more SF.

Will defo be trying this! Need something to liven up my roast veg as they are a bit bland when just roasted in frylight! Don't blame you re the syns with the yummy cheeses - whatever you're doing Erm it's definitely working as you've lost loads xxx

Cheer m'dears :) Yeah I whacked all of the spices way up, I always do anyway, but Eastern stuff is usually way too mild. Mmm I've written down I used 10 tsp each cumin & coriander, 1 tsp each cloves & turmeric, 3 tbsp each puree & vinegar :8855: I still thought it was pretty average, not that special but not bad for a weekday night. These things I tend to like better for lunch next day :)

It's in this month's mag, p. 56. It was nice but nothing special. Very, very mild, as usual.
 
Hey erm. I love that you try so many different foods. I hope you are now a courgette convert. ;-) I love them, especially home grown summer courgettes, easiest veg to grow in a pot.

Love the roast veg pics.
 
I do actually, I was thinking yesterday as I chopped another one up how I think Im a convert! :eek: I cant say that about aub*rg*nes yet though :9529:
 
I don't like aubergines either, had a really bad experience with a moussaka that totally put me off!

Tea: SW South Indian veggie stew
Snacks: Carrots, Bovril, 3 Babybel light 1 HEXA - well one of em turned out to be non-light but I didn't notice til I opened it and thought how om-tastic it was ;) :p


Sooooo SW South Indian veggie Stew - my advice: Don't bother :rolleyes:

My Afghan carrot thing was nice, a tad spicy mind! Oh and cheap as cheap can be thanks Ermie (Always said in my head like Miss Piggy saying Kermie lol)
 
Lol. Aubergine lasagna is delicious. Omnom.
 
I'm not a fan of aubergine either. I keep trying with it but currently to no avail. Courgette I'm a big fan of though. Put a sorry looking one in my spag Bol last night :)
