My tea last night:
I layered green beans in the bottom of a bowl. Filled up with Quorn and chunky vegetable chilli, and then topped with a tbsp FF natural yogurt and some fresh chives.
To make the chilli I simply fried off a load of roughly chopped mushrooms, red onion, red and yellow pepper and Quorn mince with some garlic and chilli. Added 1 tin of chopped tomatoes, 1 tin of Heinz 5 beans and about 3 tbsp chilli powder (I like my chilli HOT!!) Just mix it all up well and allow to simmer for about 10 minutes. This made loads - I've frozen what was left so I can just pull it out of the freezer and microwave when I'm in need of something quick and easy!
