Ooh I feel quite honoured!! LOL! Yes I'm gunna do a coronation chicken one to take to my night shift tomorrow as I slow-cooked a chicken today and have loads left over!! Hope you're feeling better now my coronation chick!!! XXXXXXX
 
Week 27- Day 2 (Wed)- Red day- Working night shift 7.30pm-8am.

Brekkie- 9.30am- Dorset Cereals cranberry & raspberry porridge sachet (HEXb) with 100ml skimmed milk (1.5 syns) topped with 1/2 large banana, sliced strawberries and blueberries! Also ate the other half of the banana!

12.30- Vanilla/choc sprinkles Mullerlight.

Had a sleep to prepare for night shift.

5.45pm- Grilled mackerel x 2 with salad (green leaves, spring onion, beetroot, cherry tomatoes, balsamic vinegar, grated cheddar 28g (HEXa).

Work snack- Velvet Crunch cheddar cheese and spring onion (4.5 syns). An apple.

Work break- Asda wholemeal pitta (HEXb) with coronation chicken and salad (coronation chick- skinless slow-cooked chicken, chopped spring onion and green pepper, mild curry powder, 2 tbspn Hellmanns XL mayo- 1 syn). A kiwi fruit, strawberries and blueberries.

A chocolate coated shortbread biscuit (5 syns).

Total syns 10.5

9am- at home before bed- 3 thin slices of turkey.

Slept until 5pm

On getting up- 4 large flat mushrooms with chopped mushroom stalk, spring onion and red pepper and chilli powder (Frylighted) with 7g cheddar melted over each (HEXa). Thin turkey slices. A large banana.

In work- 10.30pm- A hard boiled egg. 2 Alpen Light choc/orange bars (HEXb)

Late work break- 1am- Asda wholemeal pitta (HEXb) with coronation chicken (chicken, curry powder, Hellmanns XL 2 tbspns -1 syn), cherry toms, spring onions, red pepper) & salad leaves.
A kiwi fruit, strawberries, blueberries, a few white grapes.

Snacks- Tiny sliver of choc cake (2 syns) A few crisps (4 syns), Haribo sweets (3 syns).

Total syns 10

The coronation chicken sounded lovely...how did it taste?
I really liked it Meli!! Don't know if it was coronation chicken in the true sense, there are so many different versions, I think I'll have to experiment! but yummy all the same, and works so well in a pitta!! X

No, you're quite right, that is the authentic way!! Someone here is devizing the perfect coronation chicken- they are using apricot Mullerlight which sounds interesting! Is it Meli maybe? I'll let you know!!X

i have not seen an Apricot one for AGES!!!! hmmm....! *starts the brain into action*

Week 27- Day 4 (Fri)- Red- Working night shift 7.30pm-8am.

5am- In work- 2 hard boiled eggs.

At home-9am (before bed)- Dorset Cereals apple & raisin porridge sachet (HEXb) with 150ml skimmed milk (1/3 HEXa) and sliced banana.

On waking up- 3.45pm- A handful of blueberries. Some coronation chicken mixture as I was making it for work (see ingreds below). A few cherry tomatoes and some beetroot in balsamic vinegar. 3 Babybel light (HEXa)

6.30pm- Just before leaving for work- 1/4 of sweet chilli pork SW quiche (eggs, light choices cottage cheese, lean pork mince, red pepper, red chilli, leek, courgette, mushroom, sweet chilli sauce (1/4 syn) with slices of ham as a base).

In work- A packet of Cheddar cheese & spring onion Velvet Crunch (4.5 syns)

Late break- Asda wholemeal pitta (HEXb) filled with green salad, 'fruity' coronation chicken- Chicken, Hellmanns XL mayo 2 tbspns (1 syn), Total 0% yog, mild curry powder, cherry toms, red pepper, red chilli, pink lady apple, fresh pineapple chunks, a few sultanas (1 syn). Strawberries and blueberries. 2 oranges and a satsuma. Orange/choc sprinkles Mullerlight.

2/3 one of my HEXas was allowed for dashes of milk in tea and coffee.

Snack- a couple of mini pretzels and a couple of Pringles (2 syns)

Total syns- 8 3/4 syns

Slept 11am-4pm!

5.30pm A slice of sweet chilli pork SW quiche with free salad/cherry tomatoes. Some leftover extra lean pork mince (had to use it up) stirfried with 20g of peas (1 syn) and some chilli powder. Some white grapes.

9pm- 1 cream cracker (2 syns) and 56g cheddar (2 X HEXa). A few white grapes. A Kelloggs Fibre Plus dark choc/almond bar (HEXb). A Skinny Cow double choc mint icecream lolly (4.5 syns).

Total syns 11.5

Brekkie- 9am- 28g Dorset Cereals muesli (HEXb) with 100ml skimmed milk (1.5 syns) and a large sliced banana on top.A cold slice of sweet chilli pork SW quiche (see Fri).

Snack- 1.30- An Alpen Light Choc/orange (3 syns) and a Finn Crisp Plus wholegrain (1.5 syns).

Late lunch- 3pm- 2 fresh mackerel fillets in a chilli, lime and ginger marinade (panfrylighted)with roasted vegetables (butternut squash, red & green peppers, carrot, red onion, chilli and garlic) with 227g sweet potato (baked)- (HEXb) with a Laughing Cow Deli Light blue cheese square melted inside (1 syn). Some chunks of fresh pineapple.

Went for a walk- approx 6 miles!

Supper- 8pm- A slice of sweet chilli pork SW quiche (last slice!). 84g cheddar cheese (whoops!!) (2 HEXa plus 6 syns). Some white grapes.

10.30pm- 6 seafood sticks. A mandarin Activia fat free yogurt.

Total syns 13.

Hi Funcurls, I saw your post asking about plantains and thought I was more likely to catch you here :D

Basically plantains are like oversized bananas, however they're not fruits like your regular banana - they're a lot starchier with a yellow flesh and should be cooked. Its eaten widely in Africa, the Caribbean islands and South America. Its like a sweet potato almost but sweeter and yummier and can be boiled, fried, mashed, roasted etc! My fave way of cooking it pre SW was fried but I roast it in the oven these days and its just as delicious. You can get them at African or Asian markets, really cheap too (about 4 for £1 and 1 would feed you comfortably)

To cook it I turn the oven to 200C and then peel the plantain by toping and tailing, then placing the tip of a knife into the skin, just until it touches the flesh, run it down the length of the plantain then peel away. you can't peel it like a banana because the skin is too tough. Slice it in half lengthways and lay on a roasting tray. Spray with frylight, sprinkle with salt and roast for 30 - 40 minutes until golden brown. Deeelicious with curries, fried rice, meat sauces, spinach sauces, spicy beans or lentils, anything spicy really.
