Hi chick, not being very creative at the moment!! I tend to go through phases! At the mo I'm just trying to work through what we've got in the freezer and store cupboards (we have sooo much!!) rather than keeping on buying new things all the time! Money is an issue so trying to be more sensible!! Just topping up on fruit, veg, yogs, milk, bread for dh etc etc seems to cost a blimmin fortune!!!X

I couldnt agree more, OH keeps beggin me to do a food shop but i have refused, until we actually need stuff i dont see the point in just doing a Weds shop bcuz its Weds!!

Money is really tight for me too, payday tomorrow but that makes no difference i have some serious debt to shift!!

Therefore i am sneaking on here to find ideas of what to cook with what i have in my cupboards/freezer!! haha xx

Debt sucks doesn't it! And banks are cruel because they'll only give low interest loans to people who don't really need them! What dh and I need is a low interest loan to pay off credit cards that wouldn't tie us into the whole term of the loan (one we could pay off as quickly as we wanted to!) But that ain't gunna happen! So we have a 3 year plan to plough away at it but it does involve me working more and us both spending less! End of! What do u have in your fridge? I'll try and do a Ready Steady Cook on u!!! X

I had to do the same thing last week too, I was like Old Mother Hubbard, but had to use up what was left as we had no funds, so I "discoverd" sticky chicken, which was awesome! Chicken, honey, soy sauce and balsamic vinegar! Yum yum yum yum!!

Oohlalaa, is that the recipe from the SW website ? I fancy trying that! X

Yes, it was. I did mine with SW chips, Paul had his with rice, equally nice! And the boys ate it too! Ends up being a bit like chinese ribs, if that makes sense? Use the exact measurements though, and be patient with the cooking, cos it seems to do nothing for ages, and then all of a sudden, it thickens up. Very yummy too!

Oolalaa! Sounds very delish! Thanks x

I spotted the sticky chicken recipe on the SW website. I've often used a dressing very similar to this - no honey - so I'm definitely going to have to try it now. Could be our sunday lunday methinks!

Thanks Hevs, yea im currently on a 0% balance transfer and trying to get the debt down!!

I have stuff which i can make stuff with if that makes sense, im not down to the bare minimum yet. I have mince beef and pollock left in the freezer for meat and thats about it tho!! lol

A recipe for some sort of fish cake would be great!! Or any recipe to make pollock lovely!! haha xx

Ok well defrost the pollock, poach and flake it, make some mash, chop some spring onions, peppers, parsley or coriander really finely. Mix altogether with a bit of chilli powder and cumin, shape into patties, brush with beaten egg, dip in breadcrumbs (HEXb), spray with Frylight, oven bake! Done! And of course you can make meatballs, chilli or bolognese with the mince. The kofta curry in Curry Heaven book is nice too! X
