JessyG's food diary - positive and determined to shift the bulge

That's a beautiful venue! How was the fayre - full of ideas for flowers & cakes etc? How nice of your parents to foot the bills.

Well done on the loss but sorry you're feeling poorly. Hope you're feeling better soon.

Thank you I'm in love with it :)

The fare was good lots of ideas and found a supplier for chair ribbons! A complete steal! I tired some horrible cake though shows you must taste it and not just go on style. Had a laugh with some entertainment too which was good :)

And I know, we were really touched. I'm still going to pay for some of it though. James and I both work so I think it's only fair :) xxxx

Oh Jessy! It looks like it will be an amazing wedding venue! I love that whole country style! I can picture it with candles and lanterns and fairy lights! I am way too excited for you, haha! And your parents are the sweetest! Bless them! So good of you and James to not let them do everything though despite their offer. You are such a lovely, lovely girl!! I hope you feel better sweetie, rest up well. xx

I was innocently browsing the chocolate isle at lunch and a bag of mini caramel eggs and mini Malteser bunnies fell into my hand which forced my hand into my purse and then 5 eggs and 2 bunnies into my mouth! Oops!

Ah jessy everything sounds like it's going so so well for you! :) fab news on the engagement venue...it's not long until 3rd may and you'll be strutting your stuff looking gorg in your new dress! :) xxx

Haha ladies it was so naughty. But it did help me resist chocolate last night as I knew I couldn't be super naughty. I really don't want to ruin things by getting my sweet tooth back though so going to try and stop the chocolate train!

I made the chicken casserole again last night and it was amazing. To serve 2 you need about: 350g chicken, 150g mushrooms, 1 onion, 2 garlic cloves, 2 stock cubes, 2 tbsp tomato purée, a load of rosemary (dried and fresh) and sweet potato.

1. Brown the chicken on a high heat
2. Remove chicken and fry onion garlic and mushroom for 5 minutes
3. Return chicken to pan with onion garlic and mushroom, sprinkle 2 stock cubes over and stir, mix in the tomato purée, season with salt pepper and rosemary, and add 250ml cold water. Bring to the boil then simmer for 30 mins. Add more water if necessary and Stir regularly.
4. Meanwhile peel chop and boil 1 large sweet potato. Once soft season with pepper, add a dash of milk and mash.
5. Put the chicken mixture into a dish - I used a rectangle fairly shallow dish and top with dollops of the mash
6. Add more rosemary and cook in an oven for 25 mins at 180 fan, 200 normal

You can also add Parmesan to the sweet potato and top dish with it which tastes divine but obviously count the syns!

It really is lovely
