Ive looked but got dizzy....Im looking for cheeseburger pie.
Saw it on Jim Jim`s "what are you eating today" and it got me all excited....

Cheeseburger Pie
Total carbs 9c. Serves 4
Ingredients:
500g minced beef
50g finely chopped onion
150g chopped mushrooms
100mls double cream
2 heaped tablespoons of mayo
150g strong cheddar grated
3 eggs
salt & pepper to taste


Fry mince, onion and mushrooms together until cooked season to taste, drain off fat, add Lee & Perrins sauce.
Place in a greased foil covered deep pie dish, flatten with spoon.
Beat eggs add mayo, cream and cheese.
Pour over the top of mince, drop olives around the dish and bake in oven Gas mark 5 for 20 to 25 mins until set and golden brown.
Leave to cool before taking out of pie dish, remove foil.
Cut in to portions and wrap in cling film
This freezes very well.
Lovely with salad, cauli mash, or stir fry (Great in lunchboxes)

Optional 1 Tablespoon Lea & Perrins 2c and 10 black olives

That's my problem too. I could pop to the local garage and get some pork scratchings actually....

On another note, i was searching for some more ideas for my picnic tomorrow and came across this site Simply Recipes: Low Carb Recipes the recipes have made me droool! Apologies if someone has already posted them.
 
Celeriac Dauphinoise.

Serves 1.

1 medium celeriac.
A bowl of water with a squeeze of lemon juice.
Olive oil & butter for frying
Salt & freshly ground pepper
350ml double cream
100ml soya milk (or water)
100g parmesan cheese

Preheat the oven to 180c.
Cut celeriac into 4 pieces, peel & cut each slice into pieces about the thickness of a pound coin. Put straight into the bowl of wtaer to stop it going brown.
Peel & finely slice the onion & fry gently in oil & butter until golden brown. The trick is to do this really slowly until they look like they are melting... can take upto 20mins.
Put a layer of celeriac into the bottom of a small lasagne type dish & sprinkle with a little of the onion & salt & pepper. Repeat with another layer, and so on, finishing with a layer of celeriac.
Let down the double cream with enough soya milk (or water) to make the consistancy of single cream. Pour over the dish until liquid almost reaches the top. Sprinkle with lots of parmesan.
Bake for approx 45 mins, until bubbling & golden. The celeriac should be tender when poked with a knife.

i have been finding some meats very dry to eat. so i made up my own dip. tastes great with a plate of chicken and celery sticks :D
tablespoon full fat mayonaise
tablespoon cream cheese
and a sprinkle of garlic salt.
just mix it together and dip away.

Deviled Eggs
Ingredients


  • 1 dozen eggs
  • 2 teaspoons dijon mustard
  • 1/3 cup mayonnaise
  • 1 Tbsp minced onion or shallot
  • 1/4 teaspoon tabasco
  • Salt and pepper
  • Paprika

Method

1 First hard boil the eggs. (See how to make hard boiled eggs.) Fill up a large saucepan half-way with water and gently add the eggs. Cover the eggs with at least an inch of water. Add a teaspoon of vinegar to the water (this will help contain egg whites from leaking out if any of the shells crack while cooking). Add a pinch of salt to the water. Bring the water to a boil. Cover, and remove from heat. Let sit covered for 12-15 minutes. Drain hot water from pan and run cold water over the eggs. (At this point if you crack the egg shells while the eggs are cooling, it will make it easier to peel the shells.) Let sit in the cool water a few minutes, changing the water if necessary to keep it cool.
2 Peel the eggs. Using a sharp knife, slice each egg in half, lengthwise. Gently remove the yolk halves and place in a small mixing bowl. Arrange the egg white halves on a serving platter.

3 Using a fork, mash up the yolks and add mustard, mayonnaise, onion, tabasco, and a sprinkling of salt and pepper. Spoon egg yolk mixture into the egg white halves. Sprinkle with paprika.
Makes 2 dozen deviled eggs.
