Just letting you know don't bother with that chicken curry recipe if you actually want curry...... its never seen nor heard of curry!!!!!!!!!!!!

But if you want bland creamy garlicy chicken its quite nice. Sorry only having a strop as I've been looking forward to curry all day!

I love curry but I've always found its a bit grainy when i put dry spices in. So now I just fry off some meat, garlic, mixed herbs mushrooms and spring onions . Stir in a tablespoon of pataks paste (i use rogan josh) then add a dollop of cream depending on how hot you want it.

If I'm on my own and my fussy other half isnt with me I'll also put in a few chilli flakes for an extra kick.

It tastes lush and it only takes bout 15 - 20 mins :D

I am not sure whether or not this deserves to be called a recipe, however I like it and thought I might share.

Ingredients:

Chicken breasts
Spinach and parmesan pesto
Red peppers
Salt
a drizzle of oil.


Preparation:

coat an oven tray with the oil, place the chicken breasts in the tray, preheat the over at 180 degrees C, make an incision in each of the chicken breasts and put some pesto in it. coat the breasts with pesto too and slice red peppers. Place the red peppers on top of the chicken, cover the tray tightly with foil and place the whole thing in the oven for 40 minutes to 1 hour, depending on the amount of chicken in the tray.

The chicken comes out moist and delicious :)
 
Almond biscuits
The super easy version.

200g ground almonds (18g carbs)
2 egg whites (0g)
6 tsp splenda (3g)
1 tsp cinnamon (0.5g)

Preheat oven to 170'c
-Mix all dry ingredients together
-Add egg whites
-Stir well to combine
-On greaseproof paper place tiny balls of the mixture about an inch apart. Note you will not be using all the mixture at all yet, this is a recipe for a few batches
-Place a layer of cling film over baking sheet and using something with an indented bottom about 2inches wide, i used my cinnamon container, to press down on each biscuit. This should create a perfect cookie shape.
-Stick them in the oven for 15-20mins
-Repeat until mixture is all used up


Makes approx 45-50 biscuits..
Can be frozen
 
Forgot to say take off the cling film before putting in the oven, doh.

oooh i LOVE pesto! never thought of putting in chicken....mm maybe with a dollop of philly too!! my tastebuds are tingling lol

Hmm.. I might have another speedy recipe for you, if you don't already know it. About 12 minutes from start to finish.

Ingredients:

Chicken breasts cubed
Garlic chopped
Parmesan
Green pesto (any kind will do, I love Rocket Pesto mmmmm)
a little milk
Salt
Pepper
little oil


Preparation:

heat the oil in a pan, chuck the chicken in it, ensure it's nicely sealed. lower the heat, chuck the garlic in and fry but ensure it doesnt go too dark. After the garlic is nice and fried, add the pesto (as much as you like and as much as carbs permit) stir everything well, add a tiny little bit of milk for lubrication (philly might do the trick? Im not sure), add parmesan cheese, a pinch of salt and a little black pepper.

let it simmer for a few minutes till the chicken is fully cooked but juicy.

Creamy chicken and cauli mash

Not sure if someone else has posted this. This is my favourite meal at the moment.
I don't have any measurements, I just guess
Ingredients;

Chicken breast
Peppers - red or yellow
mushrooms
double cream
cauliflower
butter
salt & pepper

Boil cauliflower
Fry chicken in oil, adding salt and pepper.
Add chopped mushrooms and peppers.
Leave to cook until chicken is cooked through
When cooked, add a couple of tablespoons of double cream and leave again for 5-10 minutes on low heat.
Meanwhile, mash your cauliflower with butter.
Add whatever seasoning you fancy
Serve :)

I do something a little like that with lamb steaks Kim, very nice indeed. :)
 
It is - I don't eat red meat apart from bird's eye burgers and bacon. I eat quorn mince/sausages etc so I have to get creative with chicken all the time. So I'm looking for new ideas.
 
I posted a curry recipe from Persia (Iran) that goes with just about any meat Kim.
 
Curry is my favourite. I would eat it for breakfast, dinner and tea if I could! I will look for it, thanks :)

Tuna Fishcakes.
175 grms grated courgette
25grms onion chopped finely
1 thai chilli chopped finely
1/2 in piece root ginger grated
100 grms grated mozzarella (the type you buy pre grated)
2 tins tuna well drained (I used the one in brine)
1 egg beaten
1 dessert spoon thai fish sauce
zest of a lime
salt & pepper

Put courgette in tea towel and squeeze out all the water.
Put in bowl and add all other ingredients,mix well.
shape into small patties and fry.
Each is a dessertspoon off mix makes 12 small fishcakes.
The mix is quite wet but if you press it together it holds up in the pan,turn gently.

whole recipe is about 8 carbs.
 
Agreed, 1 chilli is nowhere near enough for me, more like 9 or 10 for that recipe. :)
 
Pork and Courgette casserole.

Ingredients
1lb diced pork ( I chop my own from pork loin steaks)
4 or 5 scallions, chopped up
3 or 4 Courgettes depending on size, chopped to large cubes
Chillies (Optional, but I use about 8)
Big nob of butter
Dash of Olive Oil
Ham stock Cube
Splosh of Worcester
Seasoning, salt pepper to taste

Cooking (slow cooker)
fry pork, scallion and chilli in butter until the meat is browned
place into slow cooker
add diced courgette, seasoning and Olive Oil, stir well, cover with boiling water add stock cube
bring back to the boil and then put onto slow cooker base.

You could just as easily put it in the oven I suppose.
