Kay's journey to health and happiness

Love the sound of your trips away Kay & Jen. We've nothing planned yet for this year, we were away in October and usually have our hols then. Great incentive though.

I've a few long weekends away with DH or friends over the summer, then a week off in August with some family coming to stay then. They're my goal dates for now. And a wedding at end of Aug... I either want a new skinny dress or to have significantly taken in one of my current tents!

Wow Niamh, sounds like you have quite a lot of things to look forward to this year. :) It's good to have goal dates, it gives us the motivation to keep working towards something.

I know exactly what you mean. And you just feel like you have ages to go still. But you can do this! You are doing so fab! You won't run out of steam because all your minimins friends won't let you! :p How are you feeling today? xxx

Aww thanks KMD. :) Well done on your 4lbs loss today :eek:, that's 3 friends of mine now this week that have lost an amazing 4 lbs ! Your all doing so well. I will be over the moon if I can get 2lbs because TOTM fairy is with me :rolleyes: so mega bloating going on. 2lbs will be enough for my half century sticker so will be well chuffed with that. I have worked really hard this week on my soup challenge, I hope TOTM fairy doesn't sabotage my efforts with a gain or I will not be a happy bunny.

Morning Von :p, last day of our soup challenge hun ! :) Been out this morning for my walk in the park, weather has been lovely. I hope it stays like that all week for our Salad challenge :D, so much easier to eat salads in warm weather. I hope your having a lovely morning hun. Thank you so much! :) I know what you mean about TOTM. I always feel horribly bloated and minging :cry:Got my fingers crossed for you it won't affect your loss. Even if it does though and you don't lose as much as you were expecting it will make it all the more easy for it to come off the following week! Let me know how tomorrow goes! xxx

Your foodage looked so scrummy and I loved your healthy brekkie of poached eggs, looked so yum. Must have been nice to catch up with an old friend. Hows your week going so far hun ?

Hey Von :D same here, did my walk - tick, having herbal tea - tick, on mins talking to you - tick hehe. Looking forward to our new salad challenge, popped to Asda too this morning and bought a few bits to get me started. :) I like your idea about making a base salad and then adding bits to it.

I very much enjoyed my food this week especially sticking to it at the weekend, I loved catching up with Guy we laughed a lot! Food wise, I hope I don't slip up tonight like I did last week the day before weigh in! I'm out with the girls for our monthly catch up.

How are you? I think I'm joining your salad challenge on Thursday after wi, what are the rules / plans? Xx

Hey Cookie, I'm sure you will do fab tonight and I have a feeling you will make wise choices because you already sound conscious about what happened last week. But either way you will be fine hun, if you do go over you know you can bust it out at the gym tomorrow :D.

I've posted the salad challenge on someone else's diary because they were asking about it, but think I might post it on here so if anyone wants to join they can :).

THE SALAD CHALLENGE

Some of you have been asking about what my salad challenge will be about, here is a rough guide. Feel free to join in the challenge and adapt it to what suits you best. The Salad Challenge starts tomorrow . :) The Challenge will last for 1 week.

GUIDELINES

- min of 2L of water a day
- low salt as possible in the week
- low carbs as possible (red days work better with this challenge)
- lots of protein and fresh fruit and veg
- add some body magic to the week, even light walking , at least 2-3 times in the week minimum
- one of your main meals in the day has to be salad, it cannot be a side to go with your mains, it has to be your maincourse

Make lots of variety so you don't get bored by day 4 :). Some of the salads in my mind are based around the following ingredients (you can add your own choices too) :-

- egg salad
- bean salad
- tofu salad
- tuna salad
- salmon salad
- chicken salad
- lentil salad

Will be bulking these up with lots of leafy veg. For dressing I am using the kraft bottles which are syn free and ff, they have a nice variety, I think I like the French dressing and Italian dressing the most. I'm not going to add bread sticks or croutons, although that's lush, I want to keep carbs to a minimum so plenty of protein and salad, which means red days will work quiet well with the salad challenge.

Again these are just some of my ideas, adapt it to what suits you and you can always change things as you go along in the week.
We are all hoping to kick some butt with this challenge and get fit for the summer ! :asskick:
