Mon's Cruise Journey

Thanks lovelies I have been a bit naughty this last few days and this weather is driving me insane but I did cook a lovely spinach and butternut squash curry tonight that made me forget about the weather for a bit.

It looks so yummy.

I've yet to try butternut squash on this diet or ever for that fact.

Seems very carby to me?
 
OMG, Mon, I'm totally drooling over your curry! And how the heck do you make the photo so good? Are you professional?

Spookily enough I had a craving for something more starchy last night and roasted butternut squash wedges. Trini Maria, I can't believe it's legal either as I'd happily eat it instead of potatoes, but it's dead low in carbs and totally delicious. I ate practically an entire squash last night - it weighed about a kilo! Was convinced I'd be several pounds up this morning but stayed the same.

Just checked and butternut squash has about 8g of carbs per 100g compared to broccoli which has 6.5g per 100g. Win!

I did see a recipe for squash fries...will give them a try :)
 
Joodle is right Trini surprisingly squash is very diet friendly, I love it and use it so much in savoury and sweet dishes. One of the things I will eat for the rest of my life now is squash and oatbran.

Thank you honey and the answer is no I am not professional but I do have a bazuka of a dslr that weighs nearly 3lbs for taking photos :)

I am hun thank you very much, is going to be a long night tonight, scheduling posts for my blog, and drafting up newsletters ready to send throughout the week I'm gone. Still I will be resting from tomorrow onwards :)
I have been told the villa has wi fi so i will be stalking you all from the side of the pool or beach whichever it will be. much love and hugs xxx

Haha, I read that following on from Mon's post and thought you were off to buy a bazooka of a camera and couldn't work out what that had to do with having a PV day!

I actually think butternut is the dullest of the winter squash - if you can find a crown prince one or kabocha (my fave) then you're in for a real treat. Butternut is still super tasty though, it's just there's so much variety. Not really the season yet mind you.

Mon, have a fabby, fabby time. Stay off the internet and rest!! Jx

I finally discovered this for myself yesterday. had some leftovers from my pumpkin crisp experiment, and i made the most amazing pumpkin pudding last night. i swear, it was better than ice cream, and i kept thinking 'but this can't possibly be legal!!'. i boiled and mashed the pumpkin and then added splenda, cinnamon, and some quark and stirred til it was nice and creamy. told myself i'd freeze the rest, but ended up going back and finishing a second bowl. decadent!!

have a fab holiday Mon, and don't you dare spend too much time online when you should be soaking up that sunshine by the pool!

Hello fabulous Minis I AM BACK!! with my bushy tail between my legs mind, 4 KG ON !!!!!!!!!!!!!!!!:eek:
It wasn't the food I can control that it was the cocktails!!! I made the mistake of taking my Thermomix with us and you have never tasted fresh Strawberry Daiquiri's, Pina Colada's, Maragrita's and Mojito's like these. So it was sugar fresh fruit and alcohol all day long !!! I could:cry:but I won't as we had a fabulous time, lazy mornings on the beach followed by lazy afternoons by the pool at the fabulous villa we stayed in, BLISS and I am on my way to Aldi and Sainsbury's to fill my fridge with Dukan friendly food, I think I will attach for 2 days if I can.
I am dying to see how you've all been I missed you and couldn't check in as WIFI didn't work!!!
 
Welcome back! You'll drop those kilos in no time.

Glad that you had a great holiday, it sounds like my dream getaway - drinking cocktails all day by the pool :drunk:

Welcome back! Very jealous of the holiday. I bet that at least half that gain will have disappeared by Monday, after a few pp days.
