Glad you liked it! Mine doesn't come out slimy - or maybe I just haven't noticed if it does but it's filling and warming and a real comfort food to me now.
Cupcake recipe is already in this journal somewhere but will write it up again soon as I did these slightly differently, using alpro milk, and cooked them in the oven. It's not an induction recipe though, I'm afraid.
Oh ffft I'll write it quickly now:
50g almond flour
1 egg
Tsp baking powder
Few dashes alpro unsweetened soya
Sweetener of choice
Flavoring of choice
(I use hermestas liquid sweetener, banana flavoring and cinnamon)
Mix together almond, egg, sweetener, flavoring.
Add alpro to let down the mix to a loose consistency and spoon into cake cases.
Put in oven (fan 180 for me) for 15 minutes or until they feel firm but still springy.
If you're on induction I suspect you could make the same mix using flax - it is basically a mim - but the taste wouldn't be as close to normal fairy cakes.
I have also made these using cream and water mixed as a replacement for the alpro - and I've also cooked them by popping them in the microwave for 2 mins. If you look back through this journal you'll find pics of the microwave version - id almost say the micro version are lighter and more like fairy cakes while the over version are a bit denser and more muffiny.
Sweeney Todd yesterday was fantastic. I should put the proviso here that I'm not attracted to Michael as himself (would be awkward, he's known me since I was in a pram) but Sweeney was unexpectedly sexy for a serial killer! Imelda was knock it out of the park fantastic. Wasn't mad on the judge and Anthony and Johanna didn't quite do it for me - bit too wet. But I must have seen 10 versions of this show by now - one of my favorites - and this really was great. Just really elevated by its leads.

Tiger prawns, 30g cheddar cheese, mayo
Flax porridge
Mfp: 27g carbs (mostly from ketchup/onions on burger I think) including 11g from meds.
