Moonlights' (temporary) Maintenance

Haha you super searcher Susie. The first blog is done by a lady who posts in the general low carb forum here I think - very well written!

Today I have been mostly eating

Cocoa bark

Pork ribs and celeriac chips

Salmon mousse and salad

Mfp: 28g carbs

Made a delicious ribs sauce but managed to cook the ribs wrongly so they were tougher than I wanted. Sauce so yummy though-

(For 1 rack of loin ribs)

2 tbsp 1 carb ketchup
10ml (2 tsp) Japanese soya sauce
10ml worcestershire sauce
Pinch of five spice
Squirt of hermestas liquid sweetener.

It's not sticky but it's sweet and subtly spicy. You could add mustard for more bite.

5g carbs in total.

Might do this with chicken at some point.

Oh wow! The ribs look mouth wateringly delicious ML!! X

Hmm, 1am to 5am - slight improvement but I spent all yesterday fighting myself not to nod off...

Eek, you poor thing. I think I'm doing fairly well with the jet lag, up at 5.30 this morning. Well stretch it out til 9.30 tonight if I can, although by 8pm last night I was very tired and grumpy. Off to take my mum aka the dog sitter to the coach station shortly. Hope you get through the day today.

Morning ml....them ribs look sooooo nice ....tried them chicken pakoras from m & s yesterday ....they are so nice I ate the whole pack lol....was up in the west end and needed to eat ....they are a real find they also did a snack pack of king prawns and calamari with sour cream dip also delicious and very little carbs ....think gonna go to m&s today and have a proper look round the food dept...anything else you can recommend ?

X

Glad you liked the pakoras - too spicy for me but I'd read about them in here.

From marks I buy:

Smoked salmon mousse parcels
Various prawns
Salami Napoli 30g snack packs
Cheese and calvados bake
Venison leg steak

Their sausages are also meant to be very low carb - the ones with the high pork percentage. I don't eat sausages though. Also on the cook or gastro pub shelves they oven have various 'chicken wrapped in ham' or cheese or bacon ready meals.

It's a bit expensive so I don't buy all that much there, but very nice.

Oooh that cheese and calvados bake sounds gorgeous! Must check it out next week.

Pleased you got a little bit of sleep - did the herbal thingies work at all? I have boxes of herbal teas which you are more than welcome to have - want me to send them to you?

I was thinking same cheese and calvados bake sounds really nice ....was after the salmon parcels yesterday but they had sold out ...I will trak them down today :) thanks for the info :)

Hi Ml,
So sorry to hear you've been having such a tough time with sleep ((hugs)). As always your cooking exploits are amazing - keep those recipes coming:D

Made my first ever oopsie bread! I made it flat, exactly as I do a Swiss roll - verdict on a sandwich made with it will have to come later as the first thing I did was have a slice fried with a fried egg and...

Really, really nice. Doesn't taste omelettey and fries up better than any bread substitute I've tried. So nice to have egg on toast! I should think grilled cheese would be very nice, too. Fries veeerry quickly so I'd fry it fast on both sides then top with cheese and put under the grill.

I tweaked the recipe a tiny bit. This made 4 slices:

2 very large eggs
50g soft cheese
1 tbsp flax seed
2 tsp dried Parmesan (optional)
1/2 tsp baking powder

Separate egg whites.

Mix yolks together with soft cheese, flax, Parmesan and baking powder until a smooth batter forms.

Whisk whites until stiff.

Fold yolk mix into the whites to firm a light fluffy mix.

Spoon onto baking tray coated with greased baking parchment

Cook until golden brown (15 mins fan 170 for me)

Let cool, peel off backing sheet, slice and serve!

I did try a tiny bit with butter and it tastes a bit nothingy - but that's fine when you're filling it like a sandwich. Will see how it really holds up to fillings later but definitely gets my vote for fried bread.

ETA: I can confirm it makes a very decent base for cheese on toast, too.

Yes, am glad I eventually got around to trying it. I do think it's likely to be better at least lightly toasted though.

the quantities i do make 6 slices but then i have a large rectangle baking sheet so thats just right for me, i find that they are more sturdy the next day, when new they are more delicate but they are quite surprising that they stand up to a burger (when u make them round of course) even a burger with cheese, sliced tomato and mayo in it. They are great for any filling so i have found, but must admit i am a bit hung up on cheese n tomato with mayo. i did lightly toast one and cut soldiers for dippy eggs and that was fabulous!

the restaurant sounds nice where is it? its nice to find one cater for low carb even if they do as an accident. f&b mixed grill is extortionate, but there is a gastro pub not so far away from here that does a very nice mixed grill for only £14, much cheaper than f&b.

glad you have bitten the bullet with the oopsies they open up more and more possiblilites, i have been using them in recipes in place of breadcrumbs, toasted or plain just blitzed in the processor.

xx

I made a smaller quantity recipe deliberately as I was a bit iffy about keeping it overnight - I'm the same with the Swiss roll - just a bit too squeamish about the eggs in it. So 4 slices is just right for me but yes, easy to add a bit more egg and cheese and make larger quantities.

It's a bit more of a pain to make than almond bread, and almond bread is much closer to the 'real thing' but I'm not mad on toasted almond bread and this is nicer toasted - at least to my palate. I think I'm going to do a dairylea and tomato sandwich before bed ;)

The restaurant isn't cheap - about £20 for a main meal - but it's all locally sourced etc unlike the chain restaurants. It's Bels in Godalming - a small town in Surrey.

Hiya,

Been reading your diary avidly now for the past few months...

Thanks,
