Moonlights' (temporary) Maintenance

Yay! Nice to see you back.

I agree with you that the food tastes better and carbs make you feel crap. Shame they sometimes taste so good!!

Welcome back and happy new year!

Yay...you're back! :D :D :D Was getting worried we might have to rescue you from a vat of Xmas pudding or something :p

I have no doubt your Xmas gain will whooshie off in no time - unless you've been eating absolutely epic amounts of food, most of it will be glycogen + water, not fat (as you know!). And it's great that you've gotten the desire for rubbish out of your system - I certainly know what that's like as I've managed to get tired of Lindor, something I didn't believe was even possible, lol.

Know what you mean about being ravenous too. I'm being a bit bad at the moment and using caffeine to suppress my hunger - I've had a pint of coffee and a pint of tea so far today  Mustn't let that get out of hand or I'll be so hyper Mr S will have to scrape me off the ceiling, and I probably won't sleep till February!

So glad you're back with us - not the same without you! xxx

Happy new year to you ML, great to see you back. Your dinner looks absolutely delicious, love paneer :)

Aww, good to be back. Did you get one of those giant lindor for Xmas? My friend calls them giant lindor sex balls! I didn't but quite wished I'd had the metre of Jaffa cakes!

Fortunately I don't much like mince pies, Christmas pudding, pastry or mince pies so managed to stay out of vats of those! Just ate my body weight in crisps instead!

Right best stop talking about naughty food now!

Having said I'm always ravenous, I haven't been today. Have a bit of a funny taste in my mouth though and think I might be coming down with a cold - hope not though. Definitely chugging tea for Britain, it's my diet lifesaver.

Happy new year ML. Looking forward to some fab new recipes. Good luck this year x

Oof, might be all reciped out! Will be keeping it simple til I'm back in the swing of things at least. Good luck to you too xx

Happy new year to you ML, great to see you back. Your dinner looks absolutely delicious, love paneer :)

Paneer was yummy, I marinaded it in garlic and it tasted fab. Lovely to be back!

Yayyy ur back :)
Glad u had a good Xmas and good luck getting back onto K :) ull be fine xxx

I'm usually into K within a day or two - very quickly - lets hope that's the case this time.

Food today:

Prawns and mayo

Paneer, spring onion and asparagus

Steak, scallops and spring onion

30g edam

Carbs: 22g (including 11g from medications)

Food tomorrow will be very similar I suspect as I have the other half packs of paneer and steak to use up.

Well on my way back from hospital I popped into town and got....

....a slow cooker!

Morphy Richards 3.5l oval one for £19.99 in Dyas.

So, recipes please! I want to make pulled/shredded pork at some point but not sure what cut to use.

What type of cooking liquid would you use with pork? Chicken stock?

Oh and speaking of that - I'm roasting a chicken tomorrow and want to make bone broth with he carcass. I want it to be as close to 0 carb as possible so I'm not going to add the usual carrot/onion etc. Might throw in some spring onion tips and maybe a bayleaf. Does that sound ok?

With stock I use the carrot and onion whilst it's in with the carcass on low overnight, but I throw it once it's done. I also use bay, peppercorns and salt.
I've never had success with pulled pork in the slow cooker. I usually buy aldi pork shoulder and do it on low for hours in the oven.

Hiya moonlight happy new year hope your well xxx. funny you mentioned slow cooker I was in love with mine and got back from my holiday to see my bro who was house-sitting for us has ruined it! I have a few indian recipes when your ready but don't do pork im afraid x. Its fun experimenting with those things xx

I use celery as well - also agree that you can use carrots for flavour and just whip them out later:)

Was correct about being up at 3am - but am also back in ketosis according to the sticks, yay!

Busy, I hope you're getting your brother to replace it! I am a wimp when it comes to spices - also no idea how to use them - but trying to learn a little!

With regard to the carrot and onion, I take them out too, but just having them in there for flavour will leach sugars into the broth, won't it? And then I'll have no idea of an accurate carb count... Linda's 'carb free' chicken broth just puts the chicken bones in with salt, bay and peppercorns ... Gah not sure what's best.

Morning :) yayyy to ketosis!!!

Happy slow cooking :D

Have a good day xxx

Morning, glad to see you back and great to K arriving. Looking forward to your motivational posts.

Yay for K!! :D

And you have a new kitchen toy to play with...nice!

Wish I could help with slow cooker recipes but since I've only used mine about 4 times in a year, and only for making beef stew, I'm a bit useless. Thing is, I tend to cook mostly chicken, eggs, minced beef and fish, and none of those things really need a slow cooker. Plus, I'm not good at prepping stuff first thing in the morning - you need to be pretty organised if you're going to have to wait 8 hours for something to be cooked!

Still, I have the thing, so I should try to use it more. If I do come across any good recipes I'll definitely pass them on! :)

Well I whacked my chicken bones in it last night so will go down in a bit and see how that turned out.

Been falling asleep very early and similarly waking very early lately. So much work on but struggling with it.

Food yesterday:

1 egg cheddar omelette

Spoonful peanut butter

6 tons of roast chicken with spring onion

Flax porridge

Gosh I love chicken. Am eating the yummiest dinner:

Chinese 5 spice sesame chicken

Leftover roast chicken
(or would work just as well with bought, pre-cooked chicken)
Sesame oil
5 spice
Salt
Pepper

Shred the chicken into strips and put in a bowl. Add the 5 spice and salt and pepper to taste and mix up. Pour over the sesame oil to coat.

Fry for a couple of minutes until browned and crispy.

Delicious!

You could also add some ginger and soy sauce to this, and you could add shredded vegetables to bulk it out - but cook the chicken this way first so it goes crisp and delicious.
