Don't panic about the fat on Atkins, it's essential to the diet and improves your health, the only downfall as I have experienced is if you don't stick to it and start shovelling in the bread and pasta it becomes a very unhealthy way of living.
I would do Atkins myself, I lean towards it, but in the end I just can't see how it's something I'd be able to do on a long term basis, the fact is like you, I love bread and pasta.
I maintained via SW green days and calories counting for a long time, I just got into a habit of what I ate and didn't eat, weeks would pass and I'd realise I hadn't had chocolate or a cake in ages, then I'd have one and cut back for a few days and actually lose a pound or 2.
You could of course channel all of your cooking talents into low carb living, there are some amazing recipes and substitutes to be found that are worth the effort and don't eave you feeling deprived.
Why not look at moving over to S & S, it's a bit more flexible and will reintroduce veggies at least
