Ingredients

1 tbsp. Worcester sauce
1x 330g can of Diet Coke
1 tbsp. sweetener
1 Cup of frozen peas (ff)
2 Pork Lions (ff)
4 Medium potatoes cut into wedges (ff)
6 tbsp. passata (s) (sff)

Method

Put all the ingredients in a small saucepan and bring to the boil, reduce to a high simmer, stir from time to time until the sauce starts to thicken (can take up to 25-30 mins). In the meantime cook the pork lions in a griddle pan turning over from time to time until cooked, remove & place in an oven-proof dish with a wire rack inside. Pour the sauce on one side & place in a hot oven (180c) until the sauce is bubbling, remove from the oven, turn over and using the remaining sauce, coat the other side & return to the oven until done.
In the meantime cut the potatoes into wedges, par-boil for 5 mins, remove, dry, spray with Fry Light & add your favourite seasoning and place in the hot oven for 25-30 mins.
Place the peas in a small pan, pour boiling water over and cook for 5 mins only.
When every item is cooked, plate up.

½ tsp English Mustard
1 tsp chilli flakes (s) (sff)
1 Onion, finely sliced (s) (sff)
1 tbsp. Worcester sauce
3 tbsp. Sweetener (ff)
4 tbsp. Balsamic Vinegar
4 rashers of smoky bacon, sliced in 2cm strips (ff)
200mL Knorr veg Stock
400g Aduki beans (ff)
400g Borlotti beans (s) (ff)
400g Haricot Beans (s) (ff)
400g Cannellini beans (s) (ff)
400g Red Kidney Beans (s) (ff)
700mL Passata (s) (sff)

Method

Fry the bacon until cooked, tip into a small saucepan, and then add the mustard, chilli, onion, Worcester sauce, sweetener, balsamic vinegar & stock, bring to the boil, reduce and simmer until it thickens.
Pre-heat a slow cooker and pour the contents of the saucepan in to it, open & drain the beans, washing through a sieve first until the water runs clear, cook for at least 4 hours, adding water if the mix goes too dry

Pete I sometimes think recipes will never be as tasty as the OP says....but your peanut curry.....WOW - I adapted as I'm not a fan of sweetener so omitted that and I used a chicken stock cube instead....was simply wonderful! Thank you! xx

Hiya Pete. I'm going to make your famous peanut curry tomorrow but I was wondering - I've bought the small frozen cubes of ginger from sainsburys and one cube is one tablespoon so how much shall I use for a 2 cm piece. Im really sorry if it's a daft question x

Hi All.
I have used "easy lazy" garlic, chilli or ginger instead of the original, I use 1tbsp as a normal amount, the cube of ginger is about the same amount, it's not super critical, it's your own preference! Use whatever suits you best, all my recipes are my amounts that I like, adjust them to your own taste.........

I have never done the diet coke chicken as such but I can't see what difference just changing the pork for chicken would make as the "sauce" is made the same! Enjoy.........

Pete’s Peanut Curry

(Adopted from Tesco’s real food booklet)

Not suitable for people with nut allergies

Serves 2

Ingredients

150g Pre-cooked chicken (s) (ff)
1 Onion (s) (sff)
1 chilli, deseeded & finely chopped (s) (sff)
1 Pepper, finely chopped (s) (sff)
1 Knorr “herb stockpot”
1tsp cumin
1tsp coriander
1tsp turmeric
1tbsp madras curry powder
1tbsp sweetener
2 Garlic cloves (sff)
2tbsp smooth/crunchy peanut butter 9syns/2=4.5syns each person
2cm piece of ginger, grated
200mL hot water
400g chopped tomatoes (s) (sff)
Handful of coriander

Method

In a frying pan sprayed with Fry Light, cook the chicken until browned, remove and set aside.
Spray the frying pan again with fry Light, cook onion, garlic, ginger & chilli until soft.
Add the cumin, turmeric, curry powder & coriander, cook for 2 minutes then add the chicken, tomatoes & sweetener, cook for 10 mins. Place the stockpot on top of the cooking food and allow to infuse.
Add the peanut butter and the 200mL of water mix well & cook on a medium heat until the chicken is hot, and the sauce has thickened, sprinkle the coriander over the food.
Serve with rice & side salad.
(Finish the meal with chilled melon)
 
Remember that if 2 people ate the meal the 7 syns are 7/2=3.5 syn per person!

I made the beef stroganoff the other day and it was one of the nicest things I have tasted. Today I have had the potato and leek soup for lunch and have my first attempt at peanut curry waiting for tea. Thanks Pete.
