2 cloves garlic roughly chopped
1 fresh chilli deseeded & roughly chopped (or however much you prefer, it's pretty spicy)
2 red onions roughly chopped
1 red or yellow pepper deseed & roughly chopped
1 tsp mixed herbs
1 litre veg stock
Preheat oven to 180/gas Mark 4
Put tomatoes, peppers, garlic, chilli & onions in roasting tin spray with low cal cooking spray, sprinkle on herbs n mix together
Roast in the oven for 10 mins then turn & roast for another 10/15 mins until they are chared.
Then stick it all in a large saucepan with the stock, bring to the boil, blend together, season to taste and then enjoy
