I would like to say the soup doesn't look too yummy but it really was :) (it's Pete's recipe, so thanks Pete)
After just that for my lunch I am stuffed, loving being back on plan :D

Supper, Spaghetti Carbonara.

Pete’s Spaghetti Carbonara
Serves 2
Free on Extra Easy

Ingredients

175g dried spaghetti (s)
2 rashers of smoked bacon, chopped into small pieces
2 eggs
100g Philadelphia extra light cheese spread (1Hea)
Handful of fresh chives

Method

Cook spaghetti as per packet instructions 8 mins =”Al Dente”
Cook the Bacon in a dry frying pan until done then remove and put to one side.

Break 2 eggs into a bowl and beat them together along with seasoning, chopped chives and the Philadelphia cheese.

Remove and drain the spaghetti then return to the saucepan, add the contents from the bowl and stir gently over a low heat until the eggs have set.

yesterday's Food.......................

Breakfast=Beans on 2 toast,1 apple & coffee
Dinner=Chilli Con Carni with rice & side salad
Supper= Chicken Stir-fry

Pete’s Chilli Con Carni

Serves: 4

Ingredients

1 large onion, finely chopped (s)
1 Red onion, finely chopped (s)
1 tsp “very lazy” garlic
1 tsp “very lazy” chilli
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1 x 397g/14oz can chopped tomatoes (s)
284ml/½ pint Knorr “Rich Beef” stock
salt and ground black pepper
2x 405g Kidney beans
410g Kidney Beans, drained & rinsed
454g/1lb extra lean beef mince
1 Carrot, finely chopped (s)
1 Celery, finely chopped (s)
1 tbsp Sweetener
Method
Cook the mince in a frying pan on high heat to remove any remaining fat and cook until brown, remove from the pan and set to one side.
Fry the onion, carrot, celery, gently over a low heat for 6-8 minutes, until softened and golden. Return the mince to the pan.
Add the garlic, chillies and all the spices and continue frying, stirring occasionally, for 2-3 minutes. Add the canned tomatoes, tomato puree, sweetener and stock. Stir well and bring to the boil. Reduce the heat and simmer gently for 20 minutes, until the liquid is slightly reduced.
Season with salt and pepper and add drained kidney beans. Cook for a further 5mins, making sure the beans are hot. Serve hot with some plain boiled rice and a salad.

Pete’s Chicken Stir-Fry-3
Serves 2
Ingredients
150g Pre-cooked chicken pieces
1stir-fry veg pack
1x 150g pack Amoy “straight to wok” fine noodles 1.5syn

Stir-fry sauce

1Tbsp. sweetener
1Tbsp light soy sauce
1 tsp blue dragon oyster oil 1syn
1 tsp toasted sesame oil 2syn
1 spring onion, finely chopped (s)
1 garlic clove, finely chopped (s)
1 cube of ginger, finely chopped
3 Tbsp. water

Method

Spray a wok with Fry Light and cook the chicken until cooked and browned, remove from the pan, add more Fry Light and cook the veg for 5 mins, return the chicken to the pan, add the noodles and the home made stir-fry sauce, cook for another 5 mins until the noodles are cooked.

Making the Stir-fry Sauce

In a small frying pan, add the ingredients and over a low heat, cook, stirring from time to time to blend, season with salt & pepper. Cook until it thickens then add to the stir-fry after the noodles.

I made my garlic chicken & roast vegetable lasagne last night and it was soooo good! Recipe is on page 8 of the recipe thread. This time I used half cheddar and half parmesan - yum!!! Worked out to be 1/2 HEX A and 1/2 HEX B, and 1.5 syns as it was too much for me to eat half of the whole lasagne!

That looks absolutely delicious! I'm off to find the recipe!

Pete - I love looking at your pics, your recipes always look yummy. But always wonder, do you 'always' have fruit and a side salad ;) Also what time do you stay up until?! 4 hours ago it was half 5 in the morning! lol
 
Hi Clavicles.
Yes you are right! I usually wake up around 4am and cannot get back to sleep so I come onto this website! It's been the same for several years now, I cat nap usually after dinner for 1 hr.
I usually have a salad with most meals and as much fruit as possible about 2 choices per meal, usually from apples,oranges, bananas, pineapple or pears!
I am tired about 9-30.......10-00pm so go to bed to watch the TV it guarantees to make me go to sleep!

I cook my eggs in a small saucepan from Sainsbury's (see pic) its about 10cm wide and non stick, I spray with Fry Light and cook until the egg starts to set then I place a oversize glass lid across the pan and the heat & steam then cooks the egg yoke.

i do mine similar to this but in a frying pan and a casserole lid haha.. they always come out perfect!
 
i love the look of your curry.. have you got the recipe that i could copy !!

if thats for me it was quite easy and i made it up as i went along.

i used...

2 chicken thigh, skinless and boneless,
250g of mushrooms,
3 little onions (1 large),
1 courgette,
handful of spinach,
2 curry oxo cubes,
tin of chopped tomatos,
1 chicken stock cube in 1 pint of hot water,
2 frozen garlic cubes.

brown onions and chicken in a pan with the 2 oxo curry cubes,
add courgette and 2 cubes of garlic and mix around until "browned".
Add mix to pressure cooker with a tin of tomatos and add the pint of stock. Leave in for about 10 mins.
Let pressure "drain" off and add the handful of spinach and leave to simmer for a couple of mins. When it was cooking the spinach i added a few shakes of tumeric and a few shakes of garam masala.

thanks for that that seems nice and simple ..have a shed load of chicken in our freezer will have a go at that for tea sometime this week..
