What did these taste like? Ive been craving pancakes but dont like the syn free ones-would happily use a HEB to make some!

honestly i think they tasted awesome. Couldn't believe they were free (without honey) and a HB. Deffo make sure you put enough porridge oats in so that all the yoghurt is mixed and none left over because i didnt weigh and didnt put enough in this morning and they fell apart haha.. But they were perfect the day before

Todays lunch was really tasty!


I had pretend pizza, which was two slices of white Nimble (HExB) topped with 2 slices of Cathedral City Lighter (HExA), Salami (2 syns) and Cherry tomatoes then cooked under the grill........

of course.

you need..
HB amount of porridge oats,
muller light yoghurt (or could use others but i've never so i wouldnt know).
2 eggs..

Add porridge to yoghurt and mix in well.. leave over night in the fridge.
Next morning add to bowl and mix in well the 2 eggs cracked in.
Ladle in pancake sized amounts into a hot hot pan with spray light on. I tried to do 2 at once this morning and it didnt go well.. so i went back to doing it one at a time haha. Cook till you're happy with it..
Use a good spatula is the only thing i can think of as being important

Pete’s Corn Beef Hash

Serves 2

Ingredients

Princes 200g tin Lean corned beef, mashed up (4 syn/2=2 syn each)
2 medium potatoes (ff)
1 onions finely chopped (sf)
100mL skimmed milk (from daily allowance)
2 Eggs (ff)
1Tbsp dried or fresh chives
1Tbsp Brown Sauce (1syn)

Method
Put the onions through a food processor to chop them small. Spray a pan with Fry Light and sauté the onion until soft.
Peel and cut the potatoes and boil until soft. Mash them with a small amount of milk to a smooth mix, add the onions and chives, mix together.
Serve with a fried egg and brown sauce.

Pete’s Beef Burgers

Serves 4

Ingredients

500g extra lean beef mince (ff)
1 Onion, finely chopped (sf)
45g Low fat cheddar, sliced (1Hea)
Wholemeal Bap (Co-op, 1 Heb or 8syn each)
1 Egg
1Tbsp mixed herbs
Iceburg lettuce (sf)
1 large tomato (sf)
*tomato sauce if required

Method

Cook the chopped onion until soft & brown.
Place the mince in a mixing bowl and mix in the onions, herbs and the egg.
Preheat the grill or a George Forman type grill.
By hand form a burger or using a potato ricer with the smallest holes place ¼ of the mix in it and press into shape, remove and chill for 10-15 mins to firm up.
Cook for 5 mins on both sides depending on the thickness of the burger.
Toast the Bap and then plate up with lettuce, then the burger, a slice of cheese, tomato & onion (*and sauce if required)

just the vanilla one, they were very yummy!

i might put blueberries in the batter mixture next time

i used 2 diff types of yoghurt, just as a little side note haha.. i used the peachy one, and a pineappley one.. and they were nice.. gonna try with vanilla next time and see what thats like too
