The chilli bowl looks amazing! Bought some wraps earlier so I'm going to have a go at it later, I doubt it'll look as nice as that though! :D

Here are a few meals I've had over the last few weeks:

Soo.. we have smash chicken and beef savoury rice, tuna pasta salad, mango and chilli chicken with golden savoury rice, chicken, bacon and cheese salad and onion and bacon stuffed jacket potato with reduced fat sour cream! :D

Let me know how you get on with the chilli bowl. We are gonna see If chapatis work and put a syn free curry in them. Hubba hubba! Although not sure what syns are in chapatis

It was the best diet tea I've made!! So delish!!
Here is the link for the hairy dieters. The difference I made was I added half a tin of washed baked beans to the chilli and some peppers and mushrooms.

I said 6 for the discovery tortilla, 2.5 for chilli as I could only get lean and not extra lean mince. I used fat free yogurt instead of Creme fraiche. And a hex a 1x mini babybell original grated over the top :) I used the tiniest amount of oil on the tortillas but I have now bought fry light for nxt time. :) hth xxx

Paella from Gino and mels lunch programme - absolutely gorgeous . A glass of wine and chorizo to syn but otherwise dig in with large spoons x

Ingredients
Olive oil or frylight
8 chicken thigh pieces deboned de skinned
200 g prawns
250 g mussels
chorizo sausage chopped into small chunks
1 red pepper, sliced
100 g peas
1 onion, sliced
A pinch of chilli flakes
2 tsp smoked paprika
730 ml hot chicken stock
A large pinch of saffron I used turmeric
600 g paella rice
125 ml white wine
1 tin chopped tomatoes
1 small bunch of parsley
3 cloves garlic, finely chopped
The zest of 1 lemon

Method
Heat up a generous splash of olive oil ( frylight a pan) in a paella pan and add the chicken. Once the chicken has started to brown, stir in the chorizo, pepper, onion garlic and chilli. Cook until the vegetables have softened, before adding the smoked paprika.

Mix the saffron with the hot stock.

Stir in the rice and allow to toast for a few minutes, followed by the wine. Allow to boil to remove the alcohol then add the stock and chopped tomatoes. Season with a little salt, stir once, cover and leave for about 15 minutes.

Add the prawns, mussels and peas. Cover loosely with some foil or lid and cook over a very low heat for another 5 minutes or until the rice is cooked.

sprinkle parsley and squeeze lemon to serve

I can't believe that I've steered clear of Slimmers World diet for so long (always been a WW girl) but I absolutely adore the food I'm eating. I have been on the diet for nearly 6 weeks and have barely repeated a meal as there are so many tempting recipes to try.
Today it is fish and chips with mushy pea curry, tomorrow I'm trying out Pete's Peanut Curry and as I am off work this week I'm going to try making SW KFC chicken and Pete's Pasties for packed lunches for my oh. I have taken photos of some of the meals I've had but as a newbie I can't post them yet.

hi thanks for pointing that out, what a wombat- thats what happens when you 'cut and paste' lol. sorry, thats what ginos recipe says but im sure i probably used a bit more. just keep adding until its cooked .

now then the salt and pepper chicken - that was fab too.

so,

SALT AND PEPPER CHICKEN - can also be done with quorn, or just make the recipe up to the chicken bit and stir the chips in.

serves 4

4 chicken breasts chopped into strips
2 onions sliced
4 cloves garlic finely chopped
a bunch of spring onions top tailed and chopped into small bits
3 green or red chillis ( i used a teaspoon of red lazy chilli and it was plenty hot enough for us)
a green pepper - i didnt have green so used red chopped into small chunks
sea salt and pepper

fry a pan with lots frylight, add onions and green pepper fry over medium heat to soften
add garlic, spring onions, chilli to pan fry for a further minute
add chicken strips, throw in several pinches of sea salt - i used about 4 pinches. then several pinches of pepper - now the recipe didnt state ground or freshly ground so i added 2 pinches of ground black pepper, then stir fry the whole lot together until chicken cooked through. once cooked i tried it and added another 2 pinches of sea salt and some freshly ground pepper about 5 turns of the grinder and it was perfect.

let me know how you get on. im dying to try petes peanut curry too. x

Looks very pretty too....good enough to eat in fact!

Really easy Emsie - instant potato (I used tesco value), paprika and fresh lemon thyme, mixed well, dip chicken in egg and then into the smash mixture. Cook for about 25 mins, then top with a bit of cheese and pop back in oven for another 5 mins

Not suitable for people with nut allergies

150g Pre-cooked chicken (s) (ff)
1 Onion (s) (sff)
1 chilli, deseeded & finely chopped (s) (sff)
1 Pepper, finely chopped (s) (sff)
1 Knorr “herb stockpot”
1tsp cumin
1tsp coriander
1tsp turmeric
1tbsp madras curry powder
1tbsp sweetener
2 Garlic cloves (sff)
2tbsp smooth/crunchy peanut butter 9syns/2=4.5syns each person
2cm piece of ginger, grated
200mL hot water
400g chopped tomatoes (s) (sff)
Handful of coriander

Method

In a frying pan sprayed with Fry Light, cook the chicken until browned, remove and set aside.
Spray the frying pan again with fry Light, cook onion, garlic, ginger & chilli until soft.
Add the cumin, turmeric, curry powder & coriander, cook for 2 minutes then add the chicken, tomatoes & sweetener, cook for 10 mins. Place the stockpot on top of the cooking food and allow to infuse.
Add the peanut butter and the 200mL of water mix well & cook on a medium heat until the chicken is hot, and the sauce has thickened, sprinkle the coriander over the food.
Serve with rice & side salad.
(Finish the meal with chilled melon)

Yum!!!!
