Veg Soup and Prawn Crackers.jpg

Bit of a random one today! Vegetable soup (just a load of veg boiled up with veg stock and seasoning) with 2 prawn crackers haha! We had them left from a takeaway the other day and I didn't have a HexB for bread or anything so it hit the spot! Perfect soup accompaniment :)

Today's lunch, smoked haddock salad with a lemon dressing:

MrsWilsonCroft, I have no idea how to subscribe to your diary - i'm too new for all of this ;) So Sorry for being a dunce! That noodle dish looks amazing - real comfort food!! Great photograph too!! :)


Todays lunch (shared with OH..)
Jacket Potato's, scooped out then mashed with Quark, salt and pepper and spring onions, insides stuffed back in then one grating of cheese across the top (which looks like loads but it was literally one rub of the cheese!)

and a mixed salad made better with pickled beetroot.. yum!!

Then, for dinner was the Slimming World chicken tikka recipe we love. I've made it so many times now that we modify it every time depending on what's in the house. Today we added peppers and spinach to make it more jalfrezi/saag and the cauliflower works great! Usually I add chopped spring onions to the rice but we ran out (damnit!!). The rice is made with 2 bay leaves, 1/2 tsp turmeric, one veg or chicken stock cube, Half a lemon squeezed then thrown in to boil with the rice, 5 handfuls of Basmati rice.

All the food looks so yummy! I'm glad I'm full up from my lunch otherwise it would be making me hungry!

I think I'm going to have to start doing rice like you do LegoLass when I'm cooking curries. It looks much better than plain boiled, almost like its from a takeaway :)

I always fill with boiling water an inch over the top of the rice, bring to boil, stir once, then turn right down and pop a lid on. Always makes great rice!

Tonight's dinner - Mexican Bean Bake from this months SW magazine. The veggies ready for roasting and the finished item served sigh sweet potato chips. I cooked it a bit too long (got distracted and forgot to take it out of the oven!) so it doesn't look very nice but tasted lovely :D
