Dinner time! Not the best picture of it! Finishing it off just now, diet coke chicken WHICH I left on and went a bit dry but still tastes yummy. Added chillis as well and loads of garlic. Need to use my 2 HEXB's tonight, so I weighed out some brown pasta which looked like nothing. So I put on loads of brocoli and cauliflour as well, now its like a mountain of food! Plus Im so stuffed I dont think I can manage another HEXB but I'll maybe get a alpen with a cup of tea.
 
This is my dinner for tonight, it is Garlic, Mixed Herb and Lemon Salmon on a bed of Curly Kale and Spinach x

Oven baked River cobbler baked with baby plum tomato's and spinach. I had this with roasted BNS and home made ratatouille.

Aldi lamb shanks with rosemary and mint served with roasted bns, brocolli, cauliflower, cabbage and carrots.

Very filling!

If you want to be saintly and have the time on your hands then you can make your own with mashed potato! Just roll it into little balls and chill for a while then drop into boiling water for a minute or two until they float. Syn freeeeeeeeeeeeeeee :)
 
My gorgeous breakfast, french toast with strawberries, raspberries & yoghurt.

This was lovely, I soaked the bread in a mix of eggs, sweetener and vanilla extract until it was really soggy and then cooked slowly in buttery fry light until crispy. Topped with strawbs and rasps and FF natural yoghurt and it made for a fabulous breakfast and all for a B choice!

Tonight's dinner- cheesy chilli nachos. Free on green and used 1 HEA for 42g red.fat cheese.

For the quorn chilli
1x onion chopped
1x pepper chopped
1x can chopped tomatoes
approx third of a bag of quorn mince
small can of kidney beans
1 tsp italian seasoning
½ tsp chilli
½ tsp paprika
sprinkle of cayenne pepper
vegetable oxo cube

Fry the onions, peppers and quorn mince in fry light with some garlic until soft. Add all other ingredients (other than the kidney beans) and simmer for approx 20 mins (you will prob need to add some water). In the last five mins add the kidney beans.

For the nachos-
3 lasagne sheets

Boil up some water and boil each lasagne sheet (best to do it individually cos if they stick it's a nightmare to get them apart) for a couple of minutes until soft. Cut each sheet into six 'tortilla chips' and put on a baking tray sprayed with fry light. spray with more fry light add top with whatever seasoning you fancy (I used rock salt and tex mex). Put in a pre-heated oven as hot as it will go and keep and eye on them. When they look like crisps turn over and spray again. It will take about ten minutes in total for these.

Layer the tortilla chips on the plate and put the quorn chilli in the middle. Surround the chilli with a ring of cheese and add jalapenos if you wish. Put under a hot grill until the cheese has melted.

I also made 'sour cream' to have with mine by mixing a few spoons of greek yogurt with some garlic and chilli.

I know there is an argument that the lasagne tortilla chips aren't free but as I had them in place of rice and not as a snack I'm not synning them.
