Here's dinner! Roast cauliflower, roast tomato salsa and grilled seabass.
Tomato salsa was made just by roasting cherry tomatoes, 1/2 tbsp olive oil, pinch of sugar, salt & pepper and garlic. I also added some freshly chopped basil and parsley.

Sweet and Sour Chicken 1 1/2 syns per serving on EE Sauce serves 4 (or 2 hungry folk)
113g tin pineapple in juice
5 tbs chicken stock
2 tbs soy sauce
1 tbs wine vinegar - I used red
4 tbs orange juice
1 tsp sweetner
1 tbs tomato puree
2 tbs diced red pepper - I used some from a jar of roasted ones
2 level tbs cornflour - I used 1 for sauce and one to coat seasoned chicken.
salt and pepper

drain fruit and put juice in a pan along with all ingredients apart from, pineapple and cornflour. Bring to boil and simmer for 5 mins.
Mix cornflour with a little water and add to sauce, heat gently till thickened. Cut pineapple into small chunks and add to sauce, season to taste.

I diced chicken and seasoned before coating with the 1 tsp cornflour - you don't need to do this but it does make the chicken nice!, cooked in a pan sprayed with fry light then added to the sauce before serving with boiled rice.

I watched Rick Stein on TV last night and he made this dish. I knew straight away that it would be a winner and it was indeedy :D

I left out the oil and the butter in the potatoes. For the green beans I skipped the olive oil and used mustard, vinegar and a tsp of honey to cut through the sharpness. This would be great for dinner parties with a selection of steamed or roasted veggies. I ade a huge portion even though its just my husband and I but it would be great for leftovers with salads and things. Here are pics!

It tasted every bit as good as it looked! Had some leftovers in a wholemeal roll for lunch today and it was even better! This recipe is going to become a staple as DH and I love fish so much :D
 
Ronight's dinner was grilled chicken breast and roast vegetables (butternut squash, peppers and beetroot). Its my fave way of cooking veggies, love it! I'm not a huge fan of chicken breast but this was really moist!

Oh wow Britmum your Spanish chicken and rice looks wonderful! Is the recipe in your blog?
Here's what I had for dinner, grilled lamb steaks with sauteed vegetables. I got rebellious and added a bit of butter to the vegetables :D
