Right, here's what I ate yesterday:

I went to the pub with my best friend after my Aunt's, and ended being out until 2.30 this morning, then by the time I'd had a shower and got in bed it was gone 3! Feeling like a zombie this morning, if I hadn't had to get up and go to the drs this morning I would still be dead to the world. As I was writing my tea on my paper diary for group I realised I hadn't had a HexA. I did consider getting up and getting a glass of milk, but had just cleaned my teeth and by that point I was already in bed and was half asleep, so didn't bother.

As promised, here is the wonderful cheescake recipe. The amounts on here are to make it in an 8'' sandwich tin and it serves 8, but as I only have a 9'' tin and it was for a big party of people who eat a lot I made it with one and a half times the amunts in a 9'' tin and cut it into 12 pieces.

[FONT=&quot]Preparation time: 25 mins plus chilling[/FONT]

[FONT=&quot]Ingredients[/FONT]
[FONT=&quot]8 reduced fat digestive biscuits, finely crushed[/FONT]
[FONT=&quot]50g low fat spread, melted[/FONT]
[FONT=&quot]1 x 12g sachet sugar free lemon jelly crystals[/FONT]
[FONT=&quot]150ml boiling water[/FONT]
[FONT=&quot]1 tsp powdered gelatine[/FONT]
[FONT=&quot]2 x 200g pots vanilla mullerlight[/FONT]
[FONT=&quot]1-2 tsp vanilla extract[/FONT]
[FONT=&quot]1 tbsp finely grated lemon zest[/FONT]
[FONT=&quot]200g quark[/FONT]
[FONT=&quot]4-5 tbsp sweetener[/FONT]

[FONT=&quot]Mix together the crushed biscuits and melted spread, and arrange evenly in the bottom of an 8’’ springform cake tin. Flatten with the back of a spoon and refrigerate for 30 mins.[/FONT]

[FONT=&quot]Make up the jelly with the boiling water and stir in the gelatine. When cool, place the jelly mixture in a food processor with the yogurt, vanilla extract, lemon zest, quark and sweetener. Process until smooth and then pour over the biscuit base. Cover and refrigerate overnight or until set. [/FONT]



It was fab, and tasted just like real cheesecake. I used lemon and lime jelly, as I couldn't find sachets of lemon, and I used vegetarian gelatine, which I just used the whole sachet rather than measuring it out in teaspoons, and it came out fine.

If I can figure out pics I will post them in a bit. Can anyone tell me how to do it?

I will get the recipe for the mousse from my mum as well, as they were really lovely. She did them in little plastic wine glasses at 0.5 syn each (I ate 2 :D).

She does cakes when people ask her too - she used to do a lot of wedding cakes and kids birthday cakes, but now everyone's older she doesn't do the as often. My little cousin asked her to do a princess cake for her birthday with frogs on it so she's got that one to do next.

I haven't done yet, I'll be seeing her tomorrow so will post it after then :)

I've still got some cheesecake left, I'm so tempted to have some tonight, but I've already had 14 syns today so shouldn't really.

What is spooky is I was looking for someone today to make a cake for Charlie for her birthday in October :eek: this is so odd today. I was looking for Michelle's soup recipe, logged on to see how my lovely friend Tilly was, and the post above mine to her was the soup recipe :eek:

I'm searching for someone local to make a cake and you post that your mum makes them..... how odd is that. not odd she makes them of course :8855:

I'm not that far from Rushden, I live right in Northampton town centre, and my Mum lives in Kingsthorpe :) xxx

I'm a bit of a neat freak though, I have to admit. Plus, if I'm trying to avoid doing work I can find absolutely anything to distract me! :8855:

I'm halfway through my nurses training, so I'm in the process of writing up evidence for my portfolio as I finish a placement on Friday. I'm calling it quits for the night now though, my head is starting to hurt :(

I've done most of one of the pieces I need to write, so will finish that tomorrow night when I get in from Mum's, and will do the otherr bit after work on Thurs :) xxxx

Hahaha, I'm only really bothered in my own house :8855:dunno why. My brother and sister have taken to calling my house 'the OCD house' and they think I don't know :8855:

My Mum used to blame all the mess in her house on me, and would never believe it wasn't my mess, it was my kid sister's (we used to share a room). A couple of weeks after I moved out, she said to me 'I don't understand what's happened, you've moved out and it's still messy'. You should see the state my sister's room is in now I'm not there to keep it at bay!

I have to do 4 years, it's normally only 3, bt because I worked at the hospital anyway, they're funding me so I have to do some hours in my old job role and do it over a longer time period. Worth it for the funding though, and I'm still getting my full salary! There was no way I could have afforded to do it without xxxx

Mum lost 2.5lb and got joint SOTW, so she was happy too! Yay :D x
