Morning all!

I'm happy to report no hangover this morning, woooo! My feet are killing me though...I have 5 blisters that I've counted!

I'm also sat in Wetherspoon eating a breakfast wrap, not very diet friendly, lol! Back on it as soon as I'm home, and try to do the same as last week xx

Hiya hun!

It was a really lovely night apart from the shoes so I'm not going to complain too much! Lovely food at wagamama's followed by drinks and dancing in Retros...my kind of night! Xx

Sunday 4th August (EE)

Morning all!

Well yesterday ended up being a bit of a bad day food and drink-wise, but I'm back on it in earnest today. 5 days of being good and I can hopefully minimise the gain from the weekend! Positive mental attitude all the way! :D

Ok, I've just realised I'm losing the plot! I've had a bowl of mullerlight ice cream (which was rubbish ice cream full of crystals!) and I noticed myself blowing on a mouthful as if to cool it down, aaarrrggghhh!! I also caught myself doing it yesterday while eating a piece of tiffin at Costa *ahem* :eek:

I'm going round the bend! :eek:

Monday 5th August (EE)

Morning all!

What a miserable day...the weather's foul here! I've only just woken up, oops! I had a sneaky peek on the scales and I've gained 2.5lb since Friday :eek::eek: I'm going to have to work hard to try to shift some of that by weigh in on Friday! It just goes to show what a naughty weekend can do! I'm going to put my thinking cap on now and decide what to have for lunch.

Breakfast:

Lunch:

Cheese, spring onion and tomato omelette (HexA)
Ketchup - 1 syn
Wholemeal bread and spread (HexB) - 2 syns
Beetroot
Pickled onions

Supper:

Smoked haddock fishcake - 6.5 syns
Sweet potato wedges
Corn on the cob - 2 syns

I'm just posting my tabbouleh recipe to remind me what goes in it when I make it tomorrow!

Tabbouleh

Ingredients (serves 4 large portions)

200g bulgur wheat
200ml boiling water
1 red pepper, de-seeded and chopped
1 yellow or orange pepper, deseeded and chopped
350g ripe tomatoes, deseeded and chopped
5-6 spring onions, finely chopped
50g sultanas/raisins (7 syns)
5 tbsp chopped flat leaf parsley
5 tbsp chopped mint
A pinch of chilli flakes (optional)

Dressing:

4 tbsp extra virgin olive oil (24 syns or 4 x HexB)
1 tbsp tomato puree
4 tbsp lemon juice, and grated rind of the lemon
1 tsp cumin
1 tsp paprika
1 tsp salt (although less would be fine!)
1 tsp ground pepper


Method:

1. Place the bulgur wheat in a large bowl. Cover with the boiling water, stir and cover with clingfilm. Allow the water to absorb for 20 minutes
2. Meanwhile chop all the vegetables and mix the dressing. After the water has absorbed, fluff up the bulgur wheat with a forl and stir in the dressiong.
3. Add all the vegetables and herbs and mix in well.

How's everybody doing? I had another sneaky peek on the scales and they're still saying I've gained 2.5lb since Friday :( Not very hopeful about this week to be honest. Never mind, it's my own fault and I know where it's come from.

Today's sneaky peek on the scales has me back down to the weight I was on Friday, woooo! Now I doubt I'll stay there until Friday, but I'm going to try really hard not to put too much on by weigh in on Friday.
