Stubbseys Diary - back in the zone!

Still no real news on aunt Rose, was going to see her but my cousin said she is now not recognising people and is hostile to female visitors n nurses, such a shame!

Ended up on the phone to my cousin Suzanne til about 2am then couldnt zzz after, laid awake for hours so slept in this morning putting me behind. Lugged shopping in asda not at all good for my back!

forgot to eat this morning nlunchtime finally had a bit of ham at about 2pm.

Oh sweetie so sorry to hear about your aunt, but it sounds like she is surrounded by loving family - big hugs xxxxx

(PS - I leave things in the microwave, sometimes find them later in a less than pleasant state...)
 
Luckilly i didnt burn it just discovered it after i had eaten my dinner der!

my aunt is not eating, refusing her meds and pulling her drips and tubes out, she is very stubborn but got dementia too
 
Gosh that's so difficult - dementia is a really rotten messer up of minds. I wonder if it is her way of having control over at least one thing? Sxxx
 
Bless her, dementia is an awful thing. Your mind is understandably elsewhere but do try to remember to look after you. Xx
 
i have just spent over an hour of my life making an online sainbo order as i have a valid leaflet code giving me 12.00 off so not to be sniffed at. constant problems entering info like address and sending, finally it says my code is out of date when it lasts until november... very frustrated! emailed them and suspended order jeeeezzzzz
 
How frustrating. The other day I spent an age trying to order a lovely coat from Tesco online. It took forever and right at the end it said it was out of stock!!
 
honestly you would think they would actually try to use their online service just to make sure it runs smoothly...

just done a half hour of wii fit plus step, i used to do an hour to hour and half watching tv as i did it, but i was shocked when my little mii told me i have not been back for 336 days... didn't realise it had been THAT long, so started off with 30 mins. plus i have had to put my wii in my bedroom to stop my son from taking it upstairs when he fancies nicking it... that is one of the reasons i have not been on so long he never gives it back.. i will have to suss out how i can switch the bedroom tele on while i am wiiing lol.. i know how to really just one the main tv i used to watch stored funny shows that last 30 minute segments so i can reset. need to store some on upstairs sky box, can't face hours of news lol

had oopsie cheese sandwich this morning, i am getting a bit hungry and have to take my youngest to a doctors appointment between 4 and half 5 so need to sort out some food before i go or will be rushing like mad when i get back. going to have chicken breast bacon thingy i do mmmm no weight loss this week and i am doing the up 2 down 2 bit again... sigh
 
Sounds like you might just have a pattern if fluctuating before your body lets you properly lose - but maybe try changing it up a bit this week and see if it makes a difference. If you gave a regular pattern it can help to take your body by suprise. Maybe eat a bit more regularly or try some different foods.
 
Afternoon, that up down is so annoying, i do the same every few weeks.....hope you get a loss this week...I am doing a down day today in the hope to get things moving this week.
 
I almost dida fast the other day but was just so hungry that day i couldnt id love to do it but need to be more prepared

food today was different i had breakfast but ate dinner early due to sons appointment wsnt hungry this evening at all

not had anymore news about aunt Rose, one of my cousins put something on fb about whats she says n does are not really her but other than that i have not seen or heard any news.

was going to make burgers today but ended up with chicken breasts again coz went out with oh, he wanted me to bake him cheese scones, i also made a banana cake and some oopsies after all that i was pooped so just did the chicken for ease and quickness.

found this recipe for those of you that were interested in trying oopsie pizza, i thought it might break up and be too delicate to be a pizza base but someone has posted this a while back on mfp so i will add it to recipe section... i don't put sweetener in my oopsie mixture don't think it should be there when your making savoury.. but if you fancy it this is the recipe as it was


Ingredients -

3 large eggs
1 packet of splenda (or sugar sub of your choice)
dash of salt
pinch of cream of tartar (approx 1/8 tsp)
3 oz cream cheese (I used the 1/3 less fat, could use regular, but do not suggest using fat free)
1/2 tbsp butter

2 cups mozzarella cheese for topping
3/4 cup pizza sauce (I used Trader Joe's fat free pizza sauce)

Seasoning I used for the crust - oregano, basil, salt, pepper, granulated onion, and granulated garlic - no measurements taken just eyeballed.

any additional toppings you like!

Directions -

Preheat oven to 300 degrees f.

Separate the eggs and add Splenda, salt and cream cheese to the yolks. set aside. Using a mixer, add the cream of tartar to the egg whites and whip until stiff (recipe said about 3-5 minutes, mine took about 6 to 7 min). Next use the mixer to blend the egg yolk mixture. Once blended well, add the seasoning and mix in. Using a spatula, gradually fold the egg yolk mixture into the egg white mixture, being careful not to break down the egg whites (once mixed batter should look frothy).

Grease (I used the 1/2 tbsp butter) an aluminum disposable pizza pan, and spoon mixture onto the pan (do not pour batter, spoon it in spots on the pan to ensure even thickness), slightly patting the mixture down with spoon to fill into the pan.

Stick the "crust" into the oven and bake for 20 minutes (my oven only took 15 and the top was browned well)

After removing the crust from the oven, stick it in the fridge for approx 7 to 10 minutes to let cool down before adding the sauce.

Turn the oven up to 400 degrees f once you take the crust out of the oven before cooling.

(once cooled, I flipped the crust over before putting on the sauce to ensure even cooking, may stick to the bottom alittle, so carefully skim underneath with a spatula to release it from the pan.

Add the tomato sauce, cheese and any other toppings. Put pizza back in the oven and bake for another 30 minutes or until cheese starts to bubble. (mine only took approx 18 min)

Morning, that pizza thingy sounds good, might give it a try soon...the last pizza I made was the quiche one and it was delicious......homing to make it again tonight
 
Hi all,
kids tucking into a scummy chicken casserole i had the last piece of the cauliflower crust pizza base with spicy beef n chicken i also had a bf sausage and small rump steak
totm now ughgh so already feel bloated n flat

Feeling flat......lol, isn't that how we want to feel. Dinner sound yum
