The First Diary of Trudy C age 40 something!

Hi trudy, is it the bought the oatbran biccys or hm ones u can have 3 of? I am about to place an order for some flavourings from dukan and pondering whether to buy biccys mmmmmm biccys!
 
The Dukan ones that you buy from the shop Kirsty - they are pretty solid but good to crunch on!!! A bit dry so suggest a cup of tea with them - they are good to dunk!!!

So down another pound today which is a relief after the gain the doc scales showed on Friday - have been angelic since Wednesday but before then at the spa I was very healthy but probably had some sugar/carbs hidden in the food I ate such as root veg soup/bbq chicken/sezchwan chicken etc.....Was still proud of myself as I turned down pineapple sponge, banana brûlée and all sorts of lovely carby stuff on offer!!! Didn't make my muffins so gonna make them this morning and enjoy a lovely PV day............. Have a good one everyone! x

Had a nice lazy morning today - woke up at 6am and knew I wouldn't get back to sleep so got up and weighed!!! Then did not a lot till getting Ben up then I made the ginger and rhubarb muffins which are a real hit!!! Got dressed and headed to town and straight to Sainsburys for food shopping and lunch - then on to main town to get fitted for a bra (now 38c), replace broken rocket from yesterday and have a general browse!!!! Met up with a friend for coffee then headed home! Remembered as I drove in the drive that I have to do an activity with Super Ted who Ben has home from Pre School for the weekend - he isn't that keen on the teddy so been a chore to get him to do anything with it - LOL!! Anyway persuaded him to get on one of the horses with Super Ted and took a pic, printed it and wrote a wee bit in the book - job done - not with tons of enthusiasm I have to admit!!!
Got the shopping unpacked and then made some rhubarb, butternut squash soup, and mince flan for the fridge and then made dinner which was nice - full to the brim so really don't need anything else to eat but may be tempted to have some tofu creme and rhubarb later!!!! LOL!
B - 3 dukan coconut biscuits with a cup of coffee
L - ham omelette and salad
D - BNS soup/ steak/ carrot/swede/mushroom and onion sauce/ 2 muffins
OOOOps and a cheeky vodka - well it is Monday!!!!! LOLOLOLOL!

Rhubarb and ginger muffins are great, I love them on a PP day with a wee bit of icing. YUM.
Must be a weekend of Nursery Teddies - mine brought "Bearemy" home with them and then fought over who was sleeping with him, who was brushing his teeth, who was giving him breakfast porridge, etc. Lovely!!
 
Never heard of the teddy thingy before,is that all about sharing and caring?
 
Well the teddy thing was something they put together when they were doing Superheroes!!! Is about looking after 'people' or teddies in this case - Ben not that keen TBH, likes caring and sharing but not with teddies!! LOL! Couldn't update my diary last night as internet seems to have gone in my house so need to make a plan with that as was annoying not to get my night time fix of MM!!! Good day yesterday but busy, had audition last night for a concert in June but didn't sing that well so we will see what happens there!! Lots of new faces and some stunning singers which is cool....... Got a singing session tonight to learn the flemish songs for another concert in July and then a run through with the pianist at the cathedral tomorrow at which point hopefully I have more of an idea of what I am doing!!! LOL... Then have another rehearsal later in the evening for a concert next week - me thinks I have taken on too much!!! LOLOLOL.
Found out yesterday that for Ben to start school in September he needs to be 'at school' each Thursday, starting tomorrow - why they didn't let us know this last term I don't know - trying to re-jig child care is a nightmare and thankfully my fab child minder will change her days with Ben to accomodate me - means I need to finish work at 3.30 on a Thurs now but not alot I can do about it!!

I don't have a recipe for lemon cheesecake specifically but I've got a basic plain cheesecake recipe that I modify on a regular basis!

Ingredients:

300g biscuits
100g butter/margarine
200g cream cheese eg Philadelphia
600ml double cream
flavourings of your choice

It's really easy to make. Start by lightly buttering a 24cm/9-10" loose bottomed cake tin.

Crush biscuits to crumbs using food processor or put in thick food bag and crush with rolling pin. Melt butter and mix in biscuit crumbs then press into base of tin. Chill while making rest of recipe.

Put cream cheese into bowl and beat until smooth. Lightly whip the double cream and fold into cream cheese. Add flavourings at this stage if desired. Spoon over base and chill for at least 6 hours (overnight if possible).

The basic recipe uses digestives but it's also good with hobnobs or ginger nuts or chocolate digestives. I usually use cheap equivalents rather than brand names. Experiment and see what you prefer - depends what flavour you are using what goes best together too.

I often puree some raspberries and mix this in with the cream and then serve with more raspberries. This can be done with any fruit.

Another favourite is to mix the cream cheese with most of the whipped cream. Melt some chocolate and mix it in with the rest of the cream then swirl this in with the rest of the cream mix before spooning into tin. Or you could just add chocolate to the whole lot!

To make a lemon cheescake, I would suggest adding the juice and rind of 3-4 lemons at the same time as the cream although you could taste it as you add it to get to the flavour you like.

One of my favourite recipes is fudge cheescake or tablet cheesecake. Use hobnobs/other oaty bsicuits for base. Grate 200g of fudge or tablet and mix in with cream. (Option - finely chop another 50-100g of fudge or tablet and scatter over base before spooning cream mixture on.) Grate a thin layer of fudge or tablet (50-100g) over the top of cheesecake before serving. One of my friends does it slightly differently as she melts the 200g of fudge and lets it cool slightly before mixing it in rather than grating it.

It's one of those recipes that can be modified to suit yourself. If you like a stronger cheese taste add more cream cheese/use less cream or vice versa. If you like a thicker base, make in a smaller tin, or increase quantities of biscuits and butter. If you prefer a crumblier base, use less butter, etc, etc.

Grrr, stop with the cheesecake I REALLY want a slice! I have a recipe for Lavender & White Chocolate Cheesecake that tastes lovely and best of all, is PURPLE! I think when we all finally get into Stabilization we should meet up and have a huge Cheesecake-swapping party LOL!
