I don't have a recipe for lemon cheesecake specifically but I've got a basic plain cheesecake recipe that I modify on a regular basis!
Ingredients:
300g biscuits
100g butter/margarine
200g cream cheese eg Philadelphia
600ml double cream
flavourings of your choice
It's really easy to make. Start by lightly buttering a 24cm/9-10" loose bottomed cake tin.
Crush biscuits to crumbs using food processor or put in thick food bag and crush with rolling pin. Melt butter and mix in biscuit crumbs then press into base of tin. Chill while making rest of recipe.
Put cream cheese into bowl and beat until smooth. Lightly whip the double cream and fold into cream cheese. Add flavourings at this stage if desired. Spoon over base and chill for at least 6 hours (overnight if possible).
The basic recipe uses digestives but it's also good with hobnobs or ginger nuts or chocolate digestives. I usually use cheap equivalents rather than brand names. Experiment and see what you prefer - depends what flavour you are using what goes best together too.
I often puree some raspberries and mix this in with the cream and then serve with more raspberries. This can be done with any fruit.
Another favourite is to mix the cream cheese with most of the whipped cream. Melt some chocolate and mix it in with the rest of the cream then swirl this in with the rest of the cream mix before spooning into tin. Or you could just add chocolate to the whole lot!
To make a lemon cheescake, I would suggest adding the juice and rind of 3-4 lemons at the same time as the cream although you could taste it as you add it to get to the flavour you like.
One of my favourite recipes is fudge cheescake or tablet cheesecake. Use hobnobs/other oaty bsicuits for base. Grate 200g of fudge or tablet and mix in with cream. (Option - finely chop another 50-100g of fudge or tablet and scatter over base before spooning cream mixture on.) Grate a thin layer of fudge or tablet (50-100g) over the top of cheesecake before serving. One of my friends does it slightly differently as she melts the 200g of fudge and lets it cool slightly before mixing it in rather than grating it.
It's one of those recipes that can be modified to suit yourself. If you like a stronger cheese taste add more cream cheese/use less cream or vice versa. If you like a thicker base, make in a smaller tin, or increase quantities of biscuits and butter. If you prefer a crumblier base, use less butter, etc, etc.
