What are we eating today?

Me too Cheryl! Not a clue hon :sigh:
I wasn't a good girl yeaterday, I had no breakfast, a liitle bite of chicken for lunch as I couldn't be bothered and a steak for dinner and only cos someone else cooked it lol!

Today off to Doncaster to look at a hot tub (yeahhhh Vicky) so pub lunch and not sure what for dinner!

D - roast chicken, veggies and big mushrooms stuffed with cream cheese
 
Can we come to the hot tub party? I think brunch might have to be a flax pancake. I will let you all know how they turn out.
 
Spent all of last night in one at my friends house - it was ace but I came out 4 hours later like a prune ;) I'll post a piccie later xx
 
Sounds like fun though! YYYYUUUUUMMMMMM. Pancakes are lovely. Can someone please tell me how many carbs are in them? I tried a tiny bit but have decided to save it for later and have with strawberries and cream. Oh a pudding, ive missed them! Now for a very low carb day to allow for tonight

Breakfast: Atkins vanilla shake

Lunch: Rich choc MIM with vanilla cream cheese filling

Dinner: Mixed veg omelette with broccoli and fresh tomato

Snack: Maybe


I am being extra strict right now as I have experienced carb creep recently and need to 'knock it on the head'. You will note that, compared to others here, I don't eat much. Frankly this is because, close to goal, I can't tolerate as much food as I'd like. I am exercising again daily in the hope of kick starting another period of weight loss.

I will never be able to eat lots and stay slim! Not even on Atkins. This is just the way it is, and I feel blessed to have found a way of eating that is this flexible.

L: Cobb salad with olive oil viniagrette
D: Ribs, spinach, asparagus

S: floopsie with butter after the pub (only drank soda water with lemon)
E: long walk
W: 3 litres

Sunday

B: MIM
L: Floopsie cheese sandwich, hb egg (no veg as we were out sailing for the day)
D: Stuffed chicken breast wrapped in parma ham, courgette, salad

S: floopsie with butter
E: Sailing
W: 2 litres so far

Shame the weekend is over already

Ive just eaten another 2 cheese and tomato oopsie pizzas

better than a bag of crisps though!

argh forgot i had a bag of pork crunch too!

i put it evenly over a sheet and then once cooked cut it into squares..

floppy, and i stick cheese, meat and tomatoes on them, i have to eat them with a knife and fork rather than picking them up like a slice of pizza.

Well i def done something wrong then coz they look much taller than mine. My ones were about 4mm deep. Lol How stiff were your egg whites? I gave up on mine so it was a floppy peak not so i could turn the bowl upside down and put it above my head without it falling out
 
my egg whites are a soft peak too, i have to whisk by hand!!

i think the trick is to fold gently the philly yolk mix into the egg whites, any sort of whipping going on there and you end up with liquid in the bottom of the bowl, and that is to be avoided.

By the time i had folded in (extra extra carefully) it was runny. I done all of mine by hand but then borrowed neighbours electric whisk to do the last bit but kind of gave up. I also mixed the yolk mix with it. Yours look much nicer than mine did at that stage
 
start again from scratch.....

whip 6 egg whites to a stiff peak with the cream of tartar
'fork' philly into egg yolks till lumpy (small lumps)

gently fold yolky stuff into whites and place on baking paper and bake..

cross your fingers and grab a voddy (apparently) lol

as long as i have something to whack my cheese and ham on for mini snack pizzas i dont care what they look like lol
