Well i kinda made it up as i went along really! I used half a celeriac for just me - 250g. Then i pealed it and cut it into chip size pieces about a cm across. I put them into boiling water and boiled them for about 7mins. Whilst they were doing that i had a baking tray with a little oil in the oven heating up - no idea how hot i had it but was quite hot. Then i drained them, tipped them into the hot fat and cooked in oven for about 12mins, turning them twice. They do shrink quite a lot in the oven so don't be put off if you think they look a lot initially! Enjoy!
