im going to have cous cous salad again but with loads of tobasco sauce on it, having a really earyl lunch today. my lunch is at 11 today and wont be getting dinner till about 8.30 tonight so hopefully it should last me
Left over pasta bolognaise from last nights dinner. Lots of onions, peppers, tomatoe and mushrooms in for my super free then blended up to hide from the kids lol.
It's a HexA and a HexB hun and about 2 syns for the spread

I diced and cooked a couple of thick slices of smoked bacon and 2 thin sliced skinny leeks. You then butter two slices of bread and cut them into triangle quarters.
Arrange the bread slices and the bacon and leek mixture in a small dish. Pour over a mixture of 2 eggs beaten with 2tbsp of semi skimmed milk, salt and pepper. Cook in a 700w microwave for 7 minutes (or about 5 minutes in a 1000w oven). Grate over 35g of reduced fat cheddar and grill until brown and bubbling.
It's so filling...I'm having to sit down for 5 minutes after that, lol! Xx
