Ah that sounds lovely! I have had a nice relaxing day with my OH and kitten :) Just cooked Thai green curry for four and now I am looking forward to watching TV and having some chocolate mmm xx

**Todays Diary**

Breakfast; Two scotch pancakes with fat free yoghurt, blueberries and
raspberries - 237 calories​

Lunch; Warburtons sandwhich thin with caesar dressing, chicken tomatoes and onions / 1 packet of thai velvet crisps - 335 calories

Dinner; Thai green curry with cauliflower rice - 455 calories

Snacks; Galaxy orange and shortcake chocolate - 110 calories

Overall calorie intake - 1027 calories

Ohh whats your recipy for thai curry. I love it so much, haven't had it in ages

I use the philadelphia recipe for my thai green curry but add in a few extras to make it better. The thai green curry that I cook is creamier than normal thai greens but I prefer it that way, it could be easily adapted to make it more like the 'real thing' if some ingredients were reduced or taken out.

Ingredients for the curry;
1 chicken breast fillet
Half a red and half a green pepper
Onion (red or white) around 30g worth
Leeks (no recipe I have found have said to include leeks in a thai green curry but I really like them and the leeks mixed with the sauce tastes so good)
Light coconut milk 50 ml
Light philadelphia 30g
Semi skimmed milk around 60 ml
Green curry paste I have about 2 Tbsp worth
Chilli flakes
Garlic
Lime

Ingredients for the rice;
100g of cauliflower
A handful of chopped onions
Salt and pepper

Cauliflower rice is AMAZING. Its really low calorie and I prefer it to rice now. I think the flavours are much nicer and it can be mixed with loads of extras to make it different like peas, egg, coconut etc. I grate the cauliflower using a hand grater however a food processor would be easier. Then I fry the "rice" with the onions and add in lots of pepper and salt until its slightly golden.

Cooking;
First I dice the chicken breast and then marinate it with some thai green paste, chilli flakes, garlic and lime. Then fry the chicken and onions together till slightly cooked, at this point I add in the peppers and leeks till soft. I make up a mixture of the coconut milk and semi skimmed milk with some extra lime and thai green paste mixed in, this then goes into the pan with the chicken and veg. Once simmered for around 5 minutes I add in the philadelphia and let the dish simmer until it thickens. Whilst simmering I fry the cauliflower with the onions. Then its all done :) I always add in some extra thai paste at the end to make it spicier.

I would really recommend trying this if you love thai green curry with a creamy twist :)

Roasted ham...but I may served it with salad and garlic bread lol. Not quite Sunday dinner is it?! Hehe x
 
Meat feast mini pizzas!!
I just had this for lunch and it was incredible. I used the Warburtons thins and 15g of tomato purée, two Swedish meatballs, half a mini pepporami (sp?), two tomatoes and half a red onion. I put on a tiny bit of Parmesan and chive light Philadelphia at the end. It's around 250 calories! So good mmm

Mmm looks yummy!

I'm having a lazy sofa day.... Ate 700 cals already and no exercise!! Arghhh only 400 left for dinner now! X

It was! Ahh me too, well I mean I'm having a high calorie day. I'm cooking a big roast and worked out I'll be like 400 calories over my limit (not including all the oil that was used to roast the chicken!!) oops xx

Ahh wouldn't worry about being over 1 day. They reckon its actually good for your system to have one day over (spike day). I've done it since the start and I've lost over 3 stone all together, never did me any harm lol.

Lunch looks yummy and dinner sounds yummy. We are having chinese for dinner lol

Thank you :) I went quite over in the end (always knew it would happen) I went over by around 600 calories, this means I am around 400 - 450 calories over my weekly limit. :(

Breakfast; 2 x kingsmill scotch pancakes with low fat butter and low sugar apricot jam - 190 calories

Lunch; Meatball Warburtons thins mini pizza - 225 calories

Dinner; Roast chicken dinner with cheesy leeks, roasted veg and gravy - 1192 (EEK!!!)

Snacks; Onken frozen yoghurt - 60 calories / Galaxy orange chocolate - 125 calories

Total calorie intake; 1790 calories

I'll have to try and have a good healthy week again this week to loose anything, with my weight loss being so slow, with not loosing 1lb a week even though I am on a 1200 calorie limit near enough everyday I am thinking I might need to motivate myself into exercising as well to loose more ...
 
I think ur be ok I usually have one high day each wk I think it can help speed up ur metablism! roast sounds yummy most of its all healthy foods. What kind of exercise are you thinking of starting? x

Thanks Cas :) I think I let myself down by having the cheesy leeks as a side, high in calories and fat but I really couldn't resist! I love the gym when I have the motivation to go, however I haven't got the money at the mo to pay for a gym membership so I may go back to using fitness DVDs. I used to use Davina McCalls nearly everynight, its the 'power of three' DVD. Its really, really good and it works so quickly, its just having the motivation to go and do it that I am struggling to find x
